Wash, clean and pat-dry the chicken thigh pieces. Finely chop or mince the boneless chicken thighs nicely and transfer into a mixing bowl. It should come around 3 cups approx. Into it then add a cup of mozzarella cheese, 1/3 cup of mayonnaise, sprinkle some black pepper powder and salt as per taste, add freshly chopped dill 1/2 cup, crack 2 large eggs πŸ₯š, red chili 🌢 flakes 1 teaspoon, and give it a mix. Into it then add 3/4 cup of All-purpose flour and mix. Add flour gradually and mix. Once mixed well, cover it with a food wrap and refrigerate for 30 minutes.
After 30 minutes take it out from the refrigerator and give it a nice mix before frying. Into a pan heat a tablespoon of butter, then put some chicken pancake mixture right in the center and spread it nicely in the shape of a pancake. Let it cook in low to medium flame πŸ”₯ for few minutes. The chicken needs to be cooked nicely so it will take a while and gradually you will see that the texture changes and it looks cooked on the bottom side and nicely turned golden brown in color. Once the bottom side is cooked well spray some oil on the top and turn to the other side. To prepare Country-style Kimchi pancakes we need fermented kimchi which I have used the store-bought ones. Chop the big chunks of kimchi into bite sizes. Then add thinly sliced onions 1 cup into it. Also, add spring onions chopped around 3 to 4 tablespoons and 1 green chili finely chopped. Sprinkle some salt and pepper as per taste and give these a mix. Gradually add All-purpose flour around 1/2 a cup. Use flour as required to adjust the consistency of the mixture according to the kimchi used.
Give these a mix. Into it then add 3 to 4 tablespoons of water and 1 teaspoon of sugar and mix, We need to prepare a thick consistency batter. At last to make it little more spicy add 1 teaspoon of sriracha sauce and mix. Leave the mixture for 5 minutes. Before shallow frying, make sure to give the batter a mix. Add 2 teaspoons of mustard oil into a non-stick pan and heat. Pour some batter rigfht in the center of the frying pan and spread the batter in the shape of a pancake using a spatula. Fry in low to medium flame for few minutes on both sides equally until turns slightly crisp and golden brown in color. Enjoy these kimchi pancakes hot as a breakfast or a quick snack.

Wash, cut, and slice the pumpkin into thin slices, and steam until soft and fork-tender. Mash these completely using a fork. Transfer one cup of mashed pumpkin into a mixing bowl. Add boiled and grated potatoes 1/2 cup and 1/2 a cup of All-purpose flour into it. Sprinkle a little bit of salt and pepper as per taste and mix these nicely.

Wash the pumpkin under running water thoroughly before cutting it out. Remove and clean the center seed part of the pumpkin. Discard a think layer of the skin which is the hard outer part of the pumpkin. Then slice these thin. Steam until fork 🍴tender and soft.
Mash these using a fork completely, then transfer 2 cups of these mashed pumpkin into a large bowl. Into it then add 1 cup of boiled and grated potatoes πŸ₯”, 2 tablespoons of chopped coriander leaves πŸƒ, green chili 2 finely chopped, Cumin seeds 1/2 teaspoon, coriander powder 1 teaspoon, cumin powder 1 teaspoon, garam masala 1/2 teaspoon, red chili powder 1 teaspoon, Chaat masala 1 teaspoon, and give these a mix. Then add all-purpose flour 1 and 1:4 cup gradually into it and mix. Adjust adding flour as required. Prepare a thick batter and it’s ready to be shallow fried in oil or butter and cook until both side turns nicely golden brown in color.
To fry these pancakes, preferably use a non-stick pan or a thick bottomed pan to avoid sticking at the bottom. Heat up some butter 🧈 into the pan. Scoop out a portion of the batter and pour into the frying pan 🍳 by spreading it out a little bit in the shape of a pancake. Into a bowl take All-purpose flour 1 cup, Into it add 1 teaspoon of salt, 1 teaspoon of green chili /red chili powder, 1 teaspoon of black pepper powder, and give these dry ingredients a mix. Gradually add about 1 cup of water into it and start to mix to form a batter. Then add chopped coriander leaves 1/2 cup, chopped bell peppers 1/2 cup and 3 full cups of chopped cabbage. Add grated Paneer 1 cup, thinly sliced onions 1 cup and 2 teaspoons of ginger and garlic paste into it. Mix all nicely using hands. Let the mixture rest 2 to 5 minutes. Give it a mix before shallow frying.
Heat up 2 tablespoon of oil into a frying pan and put some batter. Spread it nicely all over the pan as shown in the images below. C ook in low flame for few minutes. Make sure to use a thick bottomed pan or a non-stick pan to prepare these pancakes to avoid sticking. Once the bottom sides looks cooked and slightly turns golden brown in color, spray or apply some oil on the top side of the pancake and then flip and turn to the other side. Cook the other side again for few minutes. Press sometimes using a flat spatula to firm it and cook well inside. Once turns nice and golden brown in color take these out and enjoy hot with some chutneys or sauces.

Slice or Chop some cabbage. πŸ₯¬ In cups it should be around 4 to 5 cups. Into it then add green, red, and orange bell peppers πŸ«‘ thinly sliced or chopped around 2/3 cup each of the colorful peppers or you may use any one or multiple colors. Take one JalapeΓ±o and slice it up and add to the mixture. Onion πŸ§… 1 medium sized thinly sliced around 2/3 cup used. Mix up all these ingredients together with hands.
Adding the Spices ~
Into it then add 1 teaspoon of black pepper powder, 1/2 a teaspoon of Red chili 🌢 flakes, 1 and 1/2 teaspoons of salt or salt πŸ§‚ as per taste.
Adding the Eggs ~
Then add 4 slightly beaten eggs into it and mix well to combine with the other ingredients.
Adding the flour and combining with the other ingredients ~
Next add, All-purpose flour and mix, add ginger and garlic paste 1 teaspoon, 1 teaspoon of oil, with some water πŸ’§ around 5 tablespoons and mix really well using hands. Kind of mash and mix to combine all the ingredients well. Leave this mixture for 2 minutes before frying.
Frying the Cabbage Pancakes ~
Heat a small to medium pan, add 2 tablespoons of butter or oil. Pour a layer of batter all over the pan using a spatula. Spread it nice. Cook in low to medium flame πŸ”₯ for at least 5 minutes or until you see it turns golden brown in color. When it looks well set and moves easily on pressing over it, you need to flip and turn it to the other side of the pancake πŸ₯ž. Cook the other side well. You may need to drizzle some oil or butter on to the sides to cook well or until it turns golden brown in color it’s done βœ”οΈ
Take it out serve and enjoy hot. You may enjoy these with some spicy sauce or sweet and sour chutney as well.

The vegetable pancake recipe is an easy and tasty breakfast recipe, anyone can try at home. Lots of veggies could be added as per choice to the recipe including some flour and eggs, mixed well together, to prepare a pancake mix and then shallow fried in a frying pan with some butter or oil in the shape of pancakes, and it gets ready within a few minutes.

It’s so quick and a hassle-free, no-fail recipe. I am so glad to find this out one day when I had a limited choice with the few veggies left on my shelf, and I tried making this out by mixing them with some eggsΒ and flour, and it turned out perfect.

I recommend everyone to try this at least once at home. Just make sure to use a non-stick pan if you are preparing this for the first time. Into a large bowl take some vegetables like one onion, thinly sliced, bell pepper chopped 1/2 a cup, some carrots πŸ₯• cut into stripes 1/4 cup, green beans chopped 1 cup, JalapeΓ±o 1 thinly sliced, cabbage πŸ₯¬ chopped 2 full cups, Chopped coriander leaves πŸƒ 3 tablespoons, spring onions chopped 2 tablespoons, some salt πŸ§‚ and pepper powder to sprinkle as per taste, Ginger and garlic paste 1 and a 1/2 teaspoons. Mix these veggies together. Beat 3 large eggs and add to the vegetable mixture. Gradually add All-purpose flour 1 cup along with 1/4 cup of water and mix. Add water as required. Avoid adding too much water.
Mix all together nicely using hands to prepare a pancake mixture. Please watch the consistency in the images attached below. Heat 2 tablespoon of butter into a small frying pan. Scoop some portion, spread a layer, and shallow fry in a frying pan 🍳 for few minutes, until both sides are well cooked well, and nicely turns golden brown in color. Serve this with any chutney or sauce of choice. Enjoy hot.

Mix the dry ingredients the Flour and some salt together. Then add water gradually into it and mix to make a liquid dough. Into it then add some finely chopped green Chili and finely grated garlic, and 2 tablespoons of chopped coriander leaves. Mix these well and add 2 tablespoons of clarified butter and stir the batter well. The liquid dough is ready and all set to cook πŸ‘©β€πŸ³ into a frying pan with some sprinkles of cheese and veggies on the top.
For the toppings ~
Heat a pan. Grease the pan and pour some liquid batter into it and spread gently. Keeping the flame at low to medium let it cook few seconds. Sprinkle some mozzarella cheese on the top along with some chopped bell peppers πŸ«‘, chopped tomatoes πŸ…, with some chopped coriander leaves and sprinkles of salt and pepper on the top. Wash and clean 4 medium-sized potatoes πŸ₯” and peel the skin of these. Cut them into slices and steam 30-35 minutes or until the potatoes softens. Mash these using folk as these are too hot to touch initially πŸ™‚ Sprinkle some salt πŸ§‚, red chili powder 1 teaspoon, sugar 1 teaspoon, coriander leaves πŸƒ 3 tablespoons, and Almond flour 1/3 cup. Mix and mash these until a soft and smooth mixture is ready. Grab out some portions and shape them as smooth and softballs. Make some space in the center of each potato ball and fill in some mozzarella cheese as required. Close the openings of the potato balls. Slightly press to flatten these to shape them up like pancakes. Prepare all together. Heat some oil into the pan and shallow fry them until turns golden brown in color. Fry both sides equally by flipping and turning them up gently as they are too soft initially. Later they tighten up a little bit and are easy to move:) Hope this helps.

  • 1 teaspoon Red chili powder
  • 1 teaspoon Sugar
  • 3 tablespoons Choriander leaves
  • 1/3 cup Almond Flour
  • Oil to shallow fry these

Notes

Points to remember:
  • You may use any other flour in place of almond flour.
  • Make sure to mix and mash the ingredients nice and smooth
  • The oil should be medium hot once you start dropping up the pancakes.
