Vegetable Pancake

Into a large bowl take some vegetables like one onion, thinly sliced, bell pepper chopped 1/2 a cup, some carrots 🥕 cut into stripes 1/4 cup, green beans chopped 1 cup, Jalapeño 1 thinly sliced, cabbage 🥬 chopped 2 full cups, Chopped coriander leaves 🍃 3 tablespoons, spring onions chopped 2 tablespoons, some salt 🧂 and pepper powder to sprinkle as per taste, Ginger and garlic paste 1 and a 1/2 teaspoons. Mix these veggies together. Beat 3 large eggs and add to the vegetable mixture. Gradually add All-purpose flour 1 cup along with 1/4 cup of water and mix. Add water as required. Avoid adding too much water.
Mix all together nicely using hands to prepare a pancake mixture. Please watch the consistency in the images attached below. Heat 2 tablespoon of butter into a small frying pan. Scoop some portion, spread a layer, and shallow fry in a frying pan 🍳 for few minutes, until both sides are well cooked well, and nicely turns golden brown in color. Serve this with any chutney or sauce of choice. Enjoy hot.

  • 1 medium thinly sliced 1 cup Onion
  • 1 medium Bell Pepper chopped 2/3 cup
  • 2 cups Cabbage chopped
  • 1/4 cup Carrots cut into stripes

  • 3 large size Eggs
  • 1/4 cup or as required Water
  • 2 tablespoons for each pancakes Butter to shallow fry
  • Oil as required
