Chicken Pancakes with cheese

Wash, clean and pat-dry the chicken thigh pieces. Finely chop or mince the boneless chicken thighs nicely and transfer into a mixing bowl. It should come around 3 cups approx. Into it then add a cup of mozzarella cheese, 1/3 cup of mayonnaise, sprinkle some black pepper powder and salt as per taste, add freshly chopped dill 1/2 cup, crack 2 large eggs 🥚, red chili 🌶 flakes 1 teaspoon, and give it a mix. Into it then add 3/4 cup of All-purpose flour and mix. Add flour gradually and mix. Once mixed well, cover it with a food wrap and refrigerate for 30 minutes.
After 30 minutes take it out from the refrigerator and give it a nice mix before frying. Into a pan heat a tablespoon of butter, then put some chicken pancake mixture right in the center and spread it nicely in the shape of a pancake. Let it cook in low to medium flame 🔥 for few minutes. The chicken needs to be cooked nicely so it will take a while and gradually you will see that the texture changes and it looks cooked on the bottom side and nicely turned golden brown in color. Once the bottom side is cooked well spray some oil on the top and turn to the other side. Similarly continue to cook the other side for a few minutes in low to medium flame 🔥 until turns nicely golden brown in color and cooks completely inside.

  • 1.67 LBS Boneless chicken thighs (3 cups minced form)
  • 1 cup Mozzarella cheese
  • 1/3 cup Mayonnaise
