Preparing the base for the cabbage pie ~To prepare the base we need to mix 1 cup of All-purpose flour with some salt π§, pepper powder, green or red chili powder and give a quick mix to these dry ingredients. Then gradually add 1 cup of water and start to mix. Also add 3 lightly beaten eggs π₯ into this and continue to mix in order to combine these and form a batter. Mixing the other ingredients with the base or batter ~Into this batter or base we need to add 1 cup of bell peppers π«, mushrooms π cut into small pieces 1 cup, 3 full cups of cabbage chopped, 1 medium sliced jalapeΓ±os, chopped coriander leaves π 1/4 cup, salt π§ 1 teaspoon or per taste, black pepper powder, some oregano πΏ leaves dried or fresh. Mix up these ingredients very well and let it rest 2 to 5 minutes. Mix the mixture just before pouring into the baking pan to bake. Topping and baking the pie ~Finally pour this mixture into the baking pan by applying some oil into the base of the pan. Spread and set nicely with the help of a spoon π₯ or a spatula. Slicing and Chopping the Vegetables ~Slice or Chop some cabbage. π₯¬ In cups it should be around 4 to 5 cups. Into it then add green, red, and orange bell peppers π« thinly sliced or chopped around 2/3 cup each of the colorful peppers or you may use any one or multiple colors. Take one JalapeΓ±o and slice it up and add to the mixture. Onion π§ 1 medium sized thinly sliced around 2/3 cup used. Mix up all these ingredients together with hands. Adding the Spices ~Into it then add 1 teaspoon of black pepper powder, 1/2 a teaspoon of Red chili πΆ flakes, 1 and 1/2 teaspoons of salt or salt π§ as per taste. Adding the Eggs ~Then add 4 slightly beaten eggs into it and mix well to combine with the other ingredients. Adding the flour and combining with the other ingredients ~Next add, All-purpose flour and mix, add ginger and garlic paste 1 teaspoon, 1 teaspoon of oil, with some water π§ around 5 tablespoons and mix really well using hands. Kind of mash and mix to combine all the ingredients well. Leave this mixture for 2 minutes before frying.Frying the Cabbage Pancakes ~Heat a small to medium pan, add 2 tablespoons of butter or oil. Pour a layer of batter all over the pan using a spatula. Spread it nice. Cook in low to medium flame π₯ for at least 5 minutes or until you see it turns golden brown in color. Thinly slice up half of the cabbage π₯¬ Wash and clean under running water using a strainer. Let these stay in the strainer for about 10 minutes to drain out the extra water if any. Into a large bowl add chickpea flour I.e besan 1 and a 1/2 cups, rice flour 1/2 cup, cumin seeds 1 teaspoon, black salt 1/2 teaspoon, regular white salt 1 teaspoon, red chili πΆ flakes 2 teaspoons, garam masala powder 1 teaspoon, turmeric powder 1/2 teaspoon. Mix in the dry ingredients. Add thinly sliced cabbage π₯¬ 4 to 5 cups. By adding water slowly into it start mixing these up using your hands π Total water π¦ used is 3/4 cup. Do add a little extra water if required. Finally, add chopped coriander leaves 2 tablespoons and mix. The consistency of the batter needs to be thick for easy frying. Heat oil for deep frying. Once the oil gets medium hot drop small portions of the batter into it one by one leaving a small distance in between each of the fritters. Fry these in low to medium flame π₯ until turns crispy and crunchy, nicely cooked inside, and golden brown in color. Fry in batches and enjoy hot with of you sauces and chutney's.
Points to rememberRice flour is being added to add extra crispiness to the fritters. You may replace this with cornflour.Β While you prepare the batter make sure to add water little by little and mix using your hands to prepare a thick consistency batter perfect for frying.The oil should be medium hot when the batter is being dropped one by one into the oil.Fry the cabbage fritters in low to medium flame to achieve perfectness. To prepare these we need chopped cabbage, some chopped bell peppers, thinly sliced onions, All-purpose flour, ginger and garlic paste, salt, chili powder, black peppers, chopped coriander leaves, and some water.

Into a bowl take All-purpose flour 1 cup, Into it add 1 teaspoon of salt, 1 teaspoon of green chili /red chili powder, 1 teaspoon of black pepper powder, and give these dry ingredients a mix. Gradually add about 1 cup of water into it and start to mix to form a batter. Then add chopped coriander leaves 1/2 cup, chopped bell peppers 1/2 cup and 3 full cups of chopped cabbage. Add grated Paneer 1 cup, thinly sliced onions 1 cup and 2 teaspoons of ginger and garlic paste into it. Mix all nicely using hands. Let the mixture rest 2 to 5 minutes. Give it a mix before shallow frying.Heat up 2 tablespoon of oil into a frying pan and put some batter. Spread it nicely all over the pan as shown in the images below. C ook in low flame for few minutes. Make sure to use a thick bottomed pan or a non-stick pan to prepare these pancakes to avoid sticking. Once the bottom sides looks cooked and slightly turns golden brown in color, spray or apply some oil on the top side of the pancake and then flip and turn to the other side. Cook the other side again for few minutes. Press sometimes using a flat spatula to firm it and cook well inside. Once turns nice and golden brown in color take these out and enjoy hot with some chutneys or sauces.
