Ingredients required to prepare Cabbage Fritters.

  • Thinly sliced cabbage 3-4 cups
  • Chickpea flour (Besan) 1 and 1/2 cups
  • Rice flour 1/2 cup
  • Black salt 1/2 teaspoon
  • Regulate white salt 1 teaspoon
  • Red chili 🌶 flakes 2 teaspoons
  • Garam masala powder or any spice mix you like 1 teaspoon
  • Turmeric powder 1/2 teaspoon
  • Chopped coriander leaves 3 tablespoons
  • Water 3/4 cup or as required
  • Oil to deep fry

Thinly slice up half of the cabbage 🥬 Wash and clean under running water using a strainer. Let these stay in the strainer for about 10 minutes to drain out the extra water if any. Into a large bowl add chickpea flour I.e besan 1 and a 1/2 cups, rice flour 1/2 cup, cumin seeds 1 teaspoon, black salt 1/2 teaspoon, regular white salt 1 teaspoon, red chili 🌶 flakes 2 teaspoons, garam masala powder 1 teaspoon, turmeric powder 1/2 teaspoon. Mix in the dry ingredients. Add thinly sliced cabbage 🥬 4 to 5 cups. By adding water slowly into it start mixing these up using your hands 🙌 Total water 💦 used is 3/4 cup. Do add a little extra water if required. Finally, add chopped coriander leaves 2 tablespoons and mix. The consistency of the batter needs to be thick for easy frying.

Heat oil for deep frying. Once the oil gets medium hot drop small portions of the batter into it one by one leaving a small distance in between each of the fritters. Fry these in low to medium flame 🔥 until turns crispy and crunchy, nicely cooked inside, and golden brown in color.

Thinly slice half of the cabbage 🥬. Then using a strainer nicely wash and clean these. Allow to drain excess water by leaving these into the strainer for 10 minutes.

Into a large bowl take 1 and a 1/2 cup of chickpea flour (Besan). Into it then add 1/2 a cup of rice flour.

Then add the spices like black salt 1/2 teaspoon, regular salt 1 teaspoon, red chili 🌶 flakes 2 teaspoons, cumin seeds 1 teaspoon, turmeric powder 1/2 a teaspoon, Garam masala powder 1/2 teaspoon. Give a quick mix to these dry ingredients.

Into the dry mixture then add 4-5 cups of thinly sliced cabbage.

Then slowly add 3/4 cup of water and start mixing up using hands. Use water as required to prepare a thick consistency mixture, easy to fry.

Once the batter is ready add 3 tablespoons of chopped coriander leaves and give it a final mix.

Heat oil for deep frying these. Take small portions and drop into the medium hot oil one by one carefully. Stir and fry until turns crisp and nicely cooked inside. Cook in low to medium flame until turns nicely golden brown in color.

Notes

Points to remember
Rice flour is being added to add extra crispiness to the fritters. You may replace this with cornflour. 
While you prepare the batter make sure to add water little by little and mix using your hands to prepare a thick consistency batter perfect for frying.
The oil should be medium hot when the batter is being dropped one by one into the oil.
Fry the cabbage fritters in low to medium flame to achieve perfectness. These need to be cooked well inside and outside both. The outside turns crisp and golden brown in color.
You may add any spice mix that you want in place of garam masala powder. Hope this helps:)
