Pumpkin Pancakes, an easy and healthy breakfast/snack recipe idea made with only 3 main ingredients.

Wash, cut, and slice the pumpkin into thin slices, and steam until soft and fork-tender. Mash these completely using a fork. Transfer one cup of mashed pumpkin into a mixing bowl. PUMPKIN PANCAKES

Pumpkin pancakes, an easy and healthy breakfast/snack recipe idea made with only 3 main ingredients.

Wash, cut, and slice the pumpkin into thin slices, and steam until soft and fork-tender. Mash these completely using a fork. Transfer one cup of mashed pumpkin into a mixing bowl. Add boiled and grated potatoes 1/2 cup and 1/2 a cup of All-purpose flour into it. Sprinkle a little bit of salt and pepper as per taste and mix these nicely.
Heat some oil or butter into a frying pan and pour some amount, spread, and shape in the form of pancakes. Shallow fry these few minutes on each side until slightly golden brown in color. Enjoy these with any of your favorite sauces or chutney of choice.

Wash the pumpkin under running water thoroughly before cutting it out. Remove and clean the center seed part of the pumpkin. Discard a think layer of the skin which is the hard outer part of the pumpkin. Then slice these thin. Steam until fork 🍴tender and soft.
Mash these using a fork completely, then transfer 2 cups of these mashed pumpkin into a large bowl. Into it then add 1 cup of boiled and grated potatoes πŸ₯”, 2 tablespoons of chopped coriander leaves πŸƒ, green chili 2 finely chopped, Cumin seeds 1/2 teaspoon, coriander powder 1 teaspoon, cumin powder 1 teaspoon, garam masala 1/2 teaspoon, red chili powder 1 teaspoon, Chaat masala 1 teaspoon, and give these a mix. Then add all-purpose flour 1 and 1:4 cup gradually into it and mix. Adjust adding flour as required. Prepare a thick batter and it’s ready to be shallow fried in oil or butter and cook until both side turns nicely golden brown in color.
To fry these pancakes, preferably use a non-stick pan or a thick bottomed pan to avoid sticking at the bottom. Heat up some butter 🧈 into the pan. Scoop out a portion of the batter and pour into the frying pan 🍳 by spreading it out a little bit in the shape of a pancake. Cook in low to medium flame πŸ”₯ for a few minutes or until turns lightly golden brown in color. Spray some oil or butter into the top of the pancake and turn to the other side. Let it cook for few minutes on each sides. Enjoy hot with sauces/chutneys of choice.

Immediately add 1 medium finely chopped onion into its mix. Immediately add red chili 🌢 powder 1 teaspoon, turmeric powder 1 teaspoon, ginger and garlic paste 2 teaspoons, and sauté sometime or until turns nicely golden brown in color. Then add the chicken pieces to it and continue to cook. Once the chicken starts to cook and releases water add cumin powder 1 teaspoon, coriander powder 2 teaspoons, garam masala powder 1 and 1.2 teaspoons, and mix these well.
Now add the pumpkins and mix. Cover and cook until the pumpkins are soft and tender. Check-in between if required. Add two green chili (slit from center), Sprinkle salt and black pepper powder as per taste, 1 medium-sized tomato πŸ… finely chopped, and coriander leaves πŸƒ 2 tablespoons along with 1 cup of water and 2 tablespoons of butter. Give these a mix and cover and continue to cook πŸ‘©β€πŸ³ on low to medium flame πŸ”₯ until well cooked. At the end, give it a mix and discard any whole spices that has been added for flavoring and enjoy.

The area where the pumpkins are grown within that farm. That specific area where the pumpkin seeds are being sowed by the farmers and being cultivated.
