Ingredients required to prepare Pumpkin curry with Chicken ~

  • Pumpkin 2 pounds
  • Boneless chicken thighs 1.37 Lb
  • Butter 4 tablespoons (total)
  • Cumin seeds 1 teaspoon
  • 1 medium onion finely chopped
  • Cumin powder 1 teaspoon
  • Coriander powder 2 teaspoons
  • Turmeric powder 1 teaspoon
  • Red chili powder 1 teaspoon
  • Garam masala powder 1 and 1/2 teaspoons
  • 1 medium tomato finely chopped
  • Salt as per taste
  • Black pepper powder 1 teaspoon
  • Green chilis 2 slit from the center
  • Water 1 cup
  • Coriander leaves chopped 2 tablespoons

Roughly chop 2 pounds of pumpkin, peeled and washed under running water, and keep aside. Chop boneless chicken thighs into thin strips and keep them aside. Into 2 tablespoons of hot butter add cumin seeds 1 teaspoon, 2 whole bay leaves,🍃 1 whole black cardamom, 2 green cardamoms small. 1 inch of cinnamon stick broken, and quickly sauté these in the butter. Immediately add 1 medium finely chopped onion into it and mix.

Immediately add red chili 🌶 powder 1 teaspoon, turmeric powder 1 teaspoon, ginger and garlic paste 2 teaspoons, and sauté sometime or until turns nicely golden brown in color. Then add the chicken pieces to it and continue to cook. Once the chicken starts to cook and releases water add cumin powder 1 teaspoon, coriander powder 2 teaspoons, garam masala powder 1 and 1.2 teaspoons, and mix these well.

Now add the pumpkins and mix. Cover and cook until the pumpkins are soft and tender. Check-in between if required. Add two green chili (slit from center), Sprinkle salt and black pepper powder as per taste, 1 medium-sized tomato 🍅 finely chopped, and coriander leaves 🍃 2 tablespoons along with 1 cup of water and 2 tablespoons of butter. Give these a mix and cover and continue to cook 👩‍🍳 on low to medium flame 🔥 until well cooked. Enjoy hot with steamed rice or naan or roti or paratha. At the end, give it a mix and discard any whole spices that has been added for flavoring and enjoy.

Check-in between if required. Add two green chili (slit from center), Sprinkle salt, and black pepper powder as per taste.

Cover and cook again as required.

Add 2 green chili slits from the center

1 medium-sized tomato 🍅 finely chopped,

Coriander leaves 🍃 2 tablespoons

1 cup of water and

2 tablespoons of butter. Give these a mix and cover and continue to cook 👩‍🍳 on low to medium flame 🔥 until well cooked.

Cover and continue to cook it until done.

Discard the whole spices before you serve
