Vanilla sponge base cake is a perfectly baked soft sponge and light sweet vanilla-flavored base cake that goes great with almost any frostings. An Eggless cake and is perfectly baked without using an oven. This could be easily prepared at home by using very common ingredients, during any special events, or could be enjoyed as a teatime light sweet cake. Using this cake base you may prepare any of these cakes like for an eg Pineapple Cake, Chocolate cake, or any other of your favorite cakes.

Vanilla sponge base cake goes great with any frostings like buttercream cheese frostings, Chocolate frosting, or say simply whipped cream frostings in this recipe, I wanted to share how it could be baked without an oven. I have used a large container with a tight lid to bake this cake. Simple and easy to bake without using an oven. Let’s see how to cook this.

The most regular base cake I must say with hassle-free baking without an oven. Perfect soft and spongy without using any eggs. For this recipe, I have used All-purpose flour 1 and 1/2 cups, baking powder 1 and 1/2 teaspoon, baking soda 1/2 teaspoon, condensed milk 3/4 cup, regular full cream milk 1 cup, vanilla essence 1 teaspoon, oil 1/4 cup, and white vinegar 1 teaspoon.

Ingredients required to prepare Vanilla sponge cake

  • All-purpose flour 1 and 1/2 cups
  • Baking powder 1 and 1/2 teaspoons
  • Baking soda 1/2 teaspoon
  • Milk 1 cup
  • Oil 1/4 cup
  • Condensed milk 3/4 cup
  • Vanilla essence 1 teaspoon
  • White vinegar 1 teaspoon

Step by step method along with the images below

Sieve All-purpose flour 1 and 1/2 cup

Add Baking powder 1 and 1/2 teaspoon

Baking soda 1/2 teaspoon

Mix the dry ingredients nicely

Full cream milk 1 cup

1/4 cup of oil

Add Condensed milk 3/4 cup gradually into it and mix to prepare a lump-free smooth batter

Nicely mix it to prepare a smooth lump free batter

Vanilla essence 1 teaspoon

White vinegar 1 teaspoon

Would like to mention that don’t worry if you don’t have vinegar. You may squeeze out 1 lemon juice into it in place if vinegar.

Total time to prepare

  • Pre-preparations 10 mins
  • Bake time 45 to 55 minutes
  • Total time consumed 1 hour approximately

Preparing a Cake tin without a baking sheet or a parchment paper

To bake a cake without a baking sheet is also possible without sticking into it 🙂 Here is how you can you that. Just apply some oil or butter nicely all over the cake tin. Put some flour in the center then tilt the cake tin and move in circular directions so that the flour sticks to the sides all over on the walls of it. I am using a 6-inch cake tin for this recipe and have added around 1 tablespoon of dry flour which I then spread all over.

Once done with spreading the flour, remove the extra flour in it by turning and tapping it around. This way a thin layer of flour base stays sticking to the cake tin which should be perfect for baking the cake without sticking:)

Baking

Now the next comes how to bake without an oven. Heat a large container and place a stand in the center if you have or else just keep a small bowl to make it work as a stand as I did. Cover the container with a tight lid and heat it. One heated place the cake tin carefully above the stand. Cover it back with the lid. Once you place the cake tin inside lower the flame completely and let it cook slowly. It will take some time to cook but it is going to be good I must say. The outcome is simply amazing. I never knew it until I tried this way. It makes the cakes more spongy and soft as compared to the oven I guess:) Well again, this is a great baking option without an oven I must say.

Time for baking

Alright, now moving to the timing ⏱ for baking this cake. The flame must be at its lowest because there are high chances that the cake will burn 🔥 if the flame is high. Baking time should be around 50 to 55 minutes to 1 hour depending on the container. Make sure to check at between 50 to 55 minutes. If the top center of the cake looks softer then cover and cook it further. Once you see it looks completely baked from the outside, insert either a stick, skewers, or a fork, and if it comes out clean it is done ✔️ and stop the flame immediately. Keep the lid open and let it cool completely before frosting.

Cooling and slicing

Scrape to the sides of the cake tin, turn and tap to release the cake from the tin. It comes out perfectly without any difficulties. Well this is again a great option to bake your cake without any parchment paper or a baking sheet.

Finally slice your soft and spongy cake base and it’s ready for frosting.
