Pineapple cake soft and spongy, a completely vegetarian recipe baked without an oven, and covered with whipped cream frosting. Decorated and filled with freshly cooked pineapples made at home is so easy to prepare and tastes just like we get in the bakery shops.

This freshly baked soft base cake is prepared using very common ingredients like flour, full cream milk, condensed milk, baking powder, baking soda, white vinegar, and vanilla essence. These are all combined-well and baked without an oven. Yes I mean to say that it’s baked but actually without using an oven. I baked this one using a large thick-bottomed container simply covered with a tight lid. Not even used any salt as a base for creating an environment for baking. Ingredients required to prepare this

  • All-Purpose Flour 1 and 1/2 cups
  • Baking powder 1 and 1/2 teaspoons
  • Baking soda 1/2 teaspoon
  • Oil 1/4 cup
  • Whole Milk 1 cup
  • Condensed milk πŸ₯› 3/4 cup
  • Vanilla essence 1 teaspoon
  • White vinegar 1 teaspoon

Ingredients required for frosting the cake

  • Whipping cream 2 cups
  • Powdered sugar 1/4 cup
  • Pineapple cooked for decorating as required
  • Pineapple syrup as required

To cook the pineapples 🍍 we need

  • 2 cups of freshly chopped pineapples
  • 4 cups of water
  • 1 cup of sugar

Cooking of the pineapples 🍍

To cook the pineapples we need to slice and chop these first and then boil these in sugar water to prepare thin consistency syrup. By using this method the pineapples get cooked and thus become slightly soft, tender, and more sweet and juicy, perfect for using cakes and desserts. So the first step is to prepare the pineapples for filling inside the cake and for decorating purposes and also this helps keep the cake moist and delicious. The mouth-melting cake gets all its flavor and juiciness in between every single bite and it tastes amazing 🀩

Into a pan add chopped pineapples 2 cups or as required and add water just double to it. I have added 1 cup of sugar into it but you may choose more if you need it to be sweeter. But make sure the syrup consistency should be thin because it gets easily soaked into the cake slices thus keeping them moist for longer.

Take 2 cups of chopped pineapples

Add water 2 cups

Add sugar 1 cup and mix to dissolve the sugar completely

Turn the flame on and let it boil and simmer in medium flame for 35 minutes approximately

These turns slightly soft, tender and juicy. At this point turn off the flame and strain the juice πŸ§ƒ and keep aside for later use. If not using immediately then do not strain, allow it to cool and refrigerate or else the pineapples dries up and is not good to use😌

Preparing batter for the cake

Sieve All-purpose flour 1 and 1/2 cups. Then add 1 and 1/2 teaspoons of baking powder, 1/2 a teaspoon of baking soda, and mix these dry ingredients.

Into the dry ingredients then add 1 cup of whole milk I.e full cream milk and mix. Gradually add condensed milk 3/4 cup and 1/4 cup of oil and give it a mix to prepare a smooth batter.

Add vanilla essence 1 teaspoon and white vinegar 1 teaspoon and mix it nicely. If you want you may also use lemon juice instead using vinegar. You need to squeeze out 1 lemon or lime juice into it.

Baking

To bake this cake we need to prepare our cake tin. Also for this recipe, I have used a container to bake this cake instead of using an oven. Simply grease the cake tin using oil or butter all around and to the sides well. Then put some flour into it and moving it all around spread the flour including the sides of the cake tin as shown in the images below. This way the cake doesn’t stick at all and comes out very easily once done baking. Then simply pour the batter into the cake tin and tap few times to remove any air bubbles trapped inside.

For baking this cake I have used a large container with a tight lid and set a bowl as a stand inside to it. You may use any stand that is available to you. Now preheat the container with a lid before putting the cake to bake inside. Once the container is heated well, place the cake tin carefully inside as it should be too hot to touch. Then lower the flame πŸ”₯ and bake for 50 to 55 minutes.

Time to bake

Depending on the thickness of the container which is being used for baking this cake and also due to different gas heating capacity it might take a little less or a little more time to bake. It would be best if you check in after around 40 to 45 minutes to see how it bakes for you.

How to know that your cake is completely baked?

To check out you may use a toothpick stick, skewers, or a fork 🍴 By inserting one of these inside and taking it out if you see the stick is all clear and no liquid dough sticking into it then it’s completely baked, and its time to turn off the flame. Or else cook it further until done.

Whipped cream frosting 🧁

To prepare frosting for the pineapple cake we need 2 cups of whipping cream. Into it add 1/4 cup of powdered sugar gradually and mix and beat using a hand beater until light and fluffy or stiff peaks. Once whipped immediately use or refrigerate until used.

As soon as we start to whip the cream just after 2 minutes start adding powdered sugar in it so that it mixes well and the cream turns light and fluffy. Further, whip it for 5 minutes or until stiff peaks.

Frosting the cake πŸŽ‚

Once the cake is done βœ”οΈ and completely baked. Allow it to cool. Then by scraping onto the sides a little bit all around take out the cake by turning and tapping on to the backside of the cake tin. Believe me, It comes out easily without much effort and perfectly baked without using a baking sheet.

Soft, spongy and dense cake

Cutting and slicing the cake

Use a stand to slice the cake because this way it cuts out well and frosting could be done easily. To prepare one like I have done simply use a plate and place it on top of any bowl which can move easily in a circular motion.

Slice the top of the cake first to even out the top to make it flat. Then divide into three equal portions.

Place one slice on the plate or a stand that we prepared and drizzle the pineapple syrup all over it. Brush it up so that the syrup soaks well inside.

Then spread a layer of whipped cream nicely. The thickness of the cream completely depends on your choice. You may need a little extra cream at the end for the decoration. Also, this depends on how much cream is required as per the design of the cake. Place the small cooked pineapple 🍍 pieces as well, all over as required.

Repeat these steps for the second layer as well. The Syrup, whipped cream and then the cooked pineapple pieces.

Finally, on the third top layer use a thick layer of whipped cream and cover the entire cake with the cream. Spread nicely to the sides and try to even it out. Then immediately refrigerate for at least 15 – 20 minutes as soon as you are done covering it with the cream. This way the cream sets in well in the refrigerator and is easy to even out the walls of the cake after refrigeration.

After refrigerating

Take it out from the refrigerator and smooth out the sides using an icing/frosting smoother and level it out. Add up your own designs and make it look beautiful 🀩
