Sabudana Pudding is a delicious dessert that is thick, creamy, and jiggly in texture. It’s an amazing dessert 🍮 that could be prepared easily at home and is basically a no flour, no eggs 🥚 , or gelatin pudding recipe. To prepare this we need very few ingredients that are very commonly used in homes like overnight soaked Sabudana, milk, sugar, condensed milk, vanilla essence, and cornstarch. Excited right ???? Ingredients required to prepare Sabudana Pudding

  • 1 cup of Sabudana (overnight soaked)
  • 2 cups of milk
  • 1/4 cup of sugar
  • 3/4 cup of condensed milk
  • 1 teaspoon of vanilla essence
  • Cornstarch slurry

Short Summary to prepare Sabudana Pudding

Wash and clean Sabudana (Sago) under running water and soak these overnight in clean water. After these have been soaked overnight they turn soft in texture, strain out the water using a strainer, and wash 2 to 3 times with clean water.

Into a saucepan take 2 cups of milk, overnight soaked Sabudana 2 cups, and bring it to boil slowly by stirring it occasionally. Once it starts to boil lower the flame and continue cooking until these soften and the milk reduces. At this point add 1/4 cup of sugar and a pinch of salt and give it a mix. Immediately add 3/4 cup of condensed milk and give it a mix. Now add Cornstarch slurry into it and mix. Add 1 teaspoon of vanilla essence and cook it further on low flame until the mixture thickens and is ready to set. The consistency is creamy and thick at the end. Finally, mash up the mixture at the end of the recipe while cooking and then transfer immediately into a greased container.

Allow it to cool completely and refrigerate for an hour or until it sets well. Take it out from the refrigerator and enjoy the delicious 😋 Sabudana pudding.

Step by step method along with the images shown below

We need to wash and clean Sabudana then overnight soak these in clean water. Once these are being soaked overnight, they get soft. Strain and wash and rinse 2 to 3 times with clean water before use.

Into a saucepan take 1 cup of overnight soaked Sabudana and 2 cups of milk. Boil and cook in low flame until these get soften and the milk reduces.

Once these starts to boil reduce the flame and continue cooking in low flame until sabudana cooked well and softens.

As you see in the image below sabudana looks cooked and are soft now and the milk has reduced as well

At this point add a pinch 🤏 of salt,

1/4 cup of sugar, and mix.

Immediately add 3/4 cup of condensed milk,

Add cornstarch slurry. To prepare cornstarch slurry use 6 teaspoons of cornstarch. Mix in some water and prepare a lump-free thin slurry.

Add cornstarch slurry into the mixture and give it a mix…

Finally, add 1 teaspoon of vanilla essence and continue cooking on low flame by continuously stirring the mixture to avoid sticking onto the bottom of the pan.

Continue cooking in low flame until the mixture gets thicker in consistency and Sabudana softens completely.

As you see the consistency is thick and creamy and is ready to set. Pour into a greased container. Grease the container with some butter and pour in the mixture.

Allow to cool completely and refrigerate for 1 hour or until it sets well. Take it out from the refrigerator and enjoy this delicious healthy Sabudana pudding anytime. Great for kids and adults both.

Flip and turn to the other side of the container to demold the pudding. It should easily come out!!!
