Rice pudding/ Kheer is a dessert that is made with milk, rice, and sugar. Super easy to prepare and healthy way of eating dessert after a meal. Creamy and delicious Indian-style cooking recipe. Do not hesitate to try this if you have not tried this before. The sweetness in the kheer comes from sugar basically, but in this recipe, I am mixing it up with sugar and jaggery. You may choose anyone out of these though. It’s going to be delicious for sure.
What is Rice Kheer made of?
Kheer is a dessert made up of Milk and rice along with sugar or jaggery. Rice Kheer is a very famous North Indian sweet dish or dessert recipe. Kheer could also be made by replacing rice with semolina or sago or soaked Sabu dana, vermicelli, brown rice, oats, etc. You may try out Sabudana/Sago dessert, or Kheer, during your fasting times or especially during the festivals.
Traditionally, kheer must have Chironji (Dry Fruits Chironji Dana Almondette Seeds), in it. But nowadays it’s not always available in the grocery stores. So in place of this dry fruit, you may add any other dry nuts of choice.

Pour milk into a deep pan and bring it to a boil. Once it is heated up lower the flame Add washed and cleaned rice into the milk and continue to cook on low flame by frequent stirrings you see the rice slowly gets cooked in milk and softens. That’s when you’ll add sugar to it. Add sugar and jaggery combined or you may choose any one of these. Mix in well. Next, add some cardamom ground into it and continue to cook Once the rice is soft and mushy and the kheer gets creamy in consistency add some cashews and mix. Continue to stir and cook some more time and then allow it to cool and chill and it’s ready to enjoy.

As you see the rice slowly gets cooked in milk and turns mushy. That’s when you’ll add sugar to it. Add sugar and jaggery combined or you may choose any one of these. Mix in well.
Add cardamom powder ground form and give it a mix.
Once you see it reaches a Pudding consistency, that is thick and creamy. Add some whole cashews and stir. Continue to cook sometimes keeping the flame at the lowest. Allow the mixture to cool or chill sometimes.
Delicious Kheer is ready to be enjoyed.

What rice is good for preparing Rice Pudding?
Traditionally small grain rice or broken rice is used for preparing Kheer at home but you may use any regular rice that is available to you. You may also use basmati rice as well. Using basmati rice will add some aroma to your Kheer. So you may easily go ahead using that as well.
Rice Kheer or Rice pudding means that the rice is being cooked very well with milk, sugar, or jaggery along with some ground cardamoms until it reaches a pudding consistency that is thick and creamy. The rice grains are being cooked until it completely soften and turn mushy until it reaches a pudding consistency.
What Milk you can use to prepare Rice Pudding?
Using Full Fat Milk brings the right Kheer consistency, though you may also use fat-free milk to prepare kheer. It won’t be as thick and creamy, but also you can surely achieve the creamy consistency by adding up some extra fresh cream into it or adding up some milk powder would help too.
