Milk Cake Recipe. Danedar. Made with 3 common ingredients. Milk Cake is an Indian dessert or sweet simply delicious. This is easy to make. It requires time and patience but it’s worth trying. The grainy texture (Danedar) gives it a more gorgeous look and tastes awesome.

Ingredients needed to prepare Milk Cake Recipe. Danedar.

  • Milk: 7 cups (full cream)
  • Sugar: 3/4 cup
  • Lemon juice: 3 to 4 teaspoons of (more or less as required to curdle the milk)
  • Clarified butter (ghee) 1 teasponn (optional)

Directions to prepare…

To prepare this delicious sweet at home we need 7 cups of milk (full cream) which needs to be boiled and then cooked continuously on low flame until reduced to half. Once reduces to half add 3 to 4 teaspoons of lemon juice and continue to stir. The milk looks creamy and starts to curdle up slowly.

The tiny granules form and slowly changes the texture. After some time the milk completely curdles up. Continue stirring and cooking in low flame until all-around 90 percent of the water evaporated. Then at this point add 3/4 cup of sugar and mix and continue cooking until the water completely dried up and the mixture starts to leave the pan. Just before all the water has evaporated add in 1 teaspoon of ghee (clarified butter) and stir, but this is optional. You may skip ghee. Cook on low flame until the mixture starts to leave the pan. Immediately transfer the mixture into a heat-safe container. Grease the container with ghee before transferring the mixture and allow it to cool at room temperature. The use of parchment paper helps taking out the mold and avoid sticking.

The recipe is so simple and easy to follow. Cooking needs some time but the outcome is delicious I must say.

Other ways to prepare Milk Cake. Danedar.

This sweet is a type of kalakand which is made by cooking the milk slowly in low flame. To make it Danedar i.e to form Granules the milk has been curdled and then cooked until all the water dries up. Since it is completely made with milk it’s also known as milk cake.

Kalakand could be prepared in another way as well I.e by preparing paneer or chenna first and then cooking with milk. Paneer is also being grated and then mixed and cooked with milk. You may check the recipe here below.

During festivals and especially during Diwali πŸͺ” times this is preapared at homes and people enjoy this a lot.

There is another way of preparing Milk cake which is called Mawa milk cake. The process of preparing is similar. But the only thing which differs is by boiling and cooking the whole I.e the full cream milk in low flame the mawa is being prepared. Adding lemon juice is optional in this preparation. Or even if it is added it should be in a lesser amount just to form tiny granules. Then the sugar is added and the rest is the same process. The texture of mawa milk cake is also very good and tastes delicious.

Continue cooking until the water completely dries up.

Just before all the water has evaporated add in 1 teaspoon of ghee (clarified butter) and stir and cook on low flame until the mixture starts to leave the pan.

Gradually the mixture thickens and the water dries up. The color also changes from white to pale yellow.

The mixture now looks perfect. There is no water at all and the mixture starts to leave the pan. At this point turn off the flame and transfer into a heat-safe container.

Place a parchment paper and by applying ghee or oil at the bottom and to the sides to avoid sticking.

Transfer the hot mixture immediately.

Allow to cool in room temperature.

Take it out…

Cut into desired pieces and enjoy with family and friends.

Shape them as per choice and use some dry nuts to garnish. These look not only gorgeous but tastes good too.
