Kalakand

Kalakand is an Indian sweet or dessert very famous in India. This is prepared using milk paneer or chenna/Chana. Very easy to make and simply delicious. The origin of this dessert is the subcontinental parts of India. In this recipe, I’m going to share how to make it very easily at home by using just milk and sugar as the main ingredients.

Taste and Texture:

This is usually light sweet and soft.

Ingredients required to prepare kalakand are as follows:

  • 4 to 5 cups of milk ( full fat )
  • Vinegar ( Vinegar 3 tablespoons + water 3 tablespoons)
  • Powdered Sugar 1/3 cup
  • Pinch of saffron ( Kesar )
  • Pinch of cardamom powder
  • Finely crushed pistachios to garnish

Note: The amount of chenna/Chana depends on the quality of the Milk.

Directions to prepare:

To prepare kalakand, boil full-fat milk 4 to 5 cups Once it reaches the boiling point, lower the flame and add vinegar.

The vinegar has to be diluted before adding into the milk. Take 3 tablespoons of vinegar + 4 tablespoons of water and mix. Then pour this mixture slowly into the boiling milk and stir. The milk will curdle. Let it stay 2 minutes

Strain the curdled milk using a muslin cloth or a cheesecloth. Squeeze out the water. The chenna is ready.

Mash the chenna using a potato masher or folk until smooth and soft.

Into a pan heat 1 cup of milk. Cook and simmer in low flame until it reduces in volume a little bit. Then add a pinch of saffron or Kesar and cardamom powder and mix. Then add 1/3 cup of powdered sugar and mix it nicely.

Finally, add the mashed chenna into it.

Cook the mixture by continuous stirring in low flame until thick.

Transfer the mixture immediately into a mold to set.

Garnish with some crushed Pistachios or any other dry fruits of choice.

Allow to cool completely and then refrigerate sometime. Cut into pieces and enjoy.
