Ingredients required to prepare Easy Onion Samosas.

To prepare the filling for onion Samosas ~

  • 1 and 1/2 cup finely chopped onions πŸ§…
  • Oats 1/3 cup + 1/3 cup
  • Cumin powder 1/2 teaspoon
  • Coriander powder 1/2 teaspoon
  • Chili 🌢 powder 1/2 teaspoon
  • Cumin seeds 1/4 teaspoon
  • Carom seeds 1/4 teaspoon
  • Fennel seeds 1/4 teaspoon
  • Salt 1/2 teaspoon or as per taste
  • Green chili 1 finely chopped
  • Coriander leaves πŸƒ finely chopped 3 tablespoons
  • Turmeric powder 1/4 teaspoon
  • Garam masala powder 1/4 teaspoon
  • Mango πŸ₯­ powder 1/4 teaspoon
  • Ginger garlic paste 1/2 teaspoons

To prepare the dough for the Samosas ~

  • All-purpose flour (maida) 2 cups
  • Salt 1/2 teaspoon or as per taste
  • Cumin seeds 1/4 teaspoon
  • Red chili 🌢 powder 1/4 teaspoon
  • Oil for deep frying the Samosas
  • Clarified butter ( Ghee ) 3 tablespoons
  • Water πŸ’§ as required to knead a soft dough

Total Cook Time ~

  • Preparing the dough 5 minutes
  • Resting the dough 5 minutes
  • Rolling and cutting 15 minutes
  • Filling and shaping 15 minutes
  • Frying 15 to 20 minutes

Preparing the onion and oats stuffing ~

Use finely chopped Onions i.e. 1 and a 1/2 cups. Into it then add 1/3 cup of oats, coriander powder 1/2 teaspoon, cumin powder 1/2 teaspoon, chili powder 1/2 teaspoon, cumin seeds 1/4 teaspoon, carom seeds 1/4 teaspoon, fennel seeds 1/4 teaspoon, salt 1/2 teaspoon or as required, green chili chopped 1, coriander leaves finely chopped 3 tablespoons, Give these a quick mix. Then add turmeric powder1/4 teaspoon, garam masala powder 1/4 teaspoon, mango powder 1/4 teaspoon, Mix these well. Finally, add ginger and garlic paste 1/2 a teaspoon and 1/3 cup of more oats into it and mix well using hands. Keep aside for later use.

Preparing the dough for the Samosas ~

To prepare the dough for the samosas we need 2 cups of all-purpose flour. Into it add 1/2 a teaspoon of salt πŸ§‚, 1/4 teaspoon of cumin seeds, and 1/4 teaspoon of red chili 🌢 powder. Mix these dry ingredients. Then add ghee I.e. clarified butter 🧈, gradually and start to mix using hands. Rub the flour with Ghee until it looks slightly crumbly and starts to hold a shape when pressed in between your hands. Now gradually add water as required and knead a soft and smooth dough. Cover and keep the dough to rest for 5 minutes.

Cutting and shaping of the Samosas ~

Uncover and divide into 6 to 7 dough balls and roll these thin one by one. Once I rolled out the dough ball I used a round shaped cutter to cut these out just to prepare even shaped samosas. Then further cut and divide the rolled-out dough right from the center as shown in the images below. Prepare all the samosa Patti together and keep it aside.

Folding of the Samosas ~

Next, fold the samosa Patti from both sides overlapping to each other preparing it a triangular-shaped kind. This prepares a small pocket in the center. Clear up the space in between to fill the samosa stuffing. Put around 2 teaspoons of onion samosa stuffing that we prepared and close the edges with the help of your fingertips. Make sure to close these tight so that no spices come out while you fry these.

Simply deep fry these in hot oil until turns golden in color and look crisp, Enjoy with your favorite chutney or sauces.

To prepare Stuffing for the Samosas we need ~

Into a large container take finely chopped Onions 1 and 1/2 cups. Add 1/3 cup of oats, coriander powder 1/2 teaspoon, cumin powder 1/2 teaspoon, chili powder 1/2 teaspoon, cumin seeds 1/4 teaspoon, carom seeds 1/4 teaspoon, fennel seeds 1/4 teaspoon, salt 1/2 teaspoon or as required, green chili chopped 1, coriander leaves finely chopped 3 tablespoons, Give these a quick mix.

Then add turmeric powder1/4 teaspoon, garam masala powder 1/4 teaspoon, mango powder 1/4 teaspoon, Mix these well. Finally, add ginger and garlic paste 1/2 teaspoon and 1/3 cup of more oats into it and mix well using hands.

Keep aside for later use

Now when you know the dough is ready. Cover and keep aside just for 5 minutes and you should be good to go.

Uncover the dough and divide it into portions between 6 to 7.

Roll out each divided part of the dough thin

Cut them out using a round-shaped big-size cutter to make all the samosas even shaped.

Pull out the extras from the sides.

Take the cut out piece and roll it slightly again to make it thin

Divide them from the center equally using a knife πŸ”ͺ

Prepare all and keep aside ready for filling. I personally prefer to prepare all together then immediately start filling these with the onion πŸ§… stuffing,

Easy Samosa Folding Method ~

Once you are done with the rolling and cutting immediately fold these and start putting the stuffing. For the folding of the Samosas please do check the following steps given below along with the images to understand better. The folding method is so simple and easy that I myself felt so happy when I first time tried this and it turned out perfect look wise πŸ™‚

1] Fold from 1 side first

2] Fold from the other side

3] ~ Pick it in your hands and close the end side nicely. Stick the open edges together. So that no spice comes out while you fry these.

4] ~ Clear up the space in the center

Stuffing up the Samosas ~

5] ~ Stuff your samosa with two teaspoons of the mixture

6] ~ Close the edges tight.

7] ~ Press with your fingertips to make some pattern on the edges. It looks good πŸ™‚

Frying the Samosas ~

Once you are done with the folding and stuffing of the samosas simply deep fry them until turn crisp and nicely golden brown in color. Enjoy and serve with any of your favorite chutneys.
