Preparing the Onion Stuffing for the Samosas ~Use finely chopped Onions i.e. 1 and a 1/2 cups. Into it then add 1/3 cup of oats, coriander powder 1/2 teaspoon, cumin powder 1/2 teaspoon, chili powder 1/2 teaspoon, cumin seeds 1/4 teaspoon, carom seeds 1/4 teaspoon, fennel seeds 1/4 teaspoon, salt 1/2 teaspoon or as required, green chili chopped 1, coriander leaves finely chopped 3 tablespoons, Give these a quick mix. Then add turmeric powder1/4 teaspoon, garam masala powder 1/4 teaspoon, mango powder 1/4 teaspoon, Mix these well. Finally add ginger and garlic paste 1/2 a teaspoon and 1/3 cup of more oats into it and mix well using hands. Keep aside for later use.Preparing the Dough for the Samosas ~To prepare the dough for the samosas we need 2 cups of all-purpose flour. Into it add 1/2 a teaspoon of salt 🧂, 1/4 teaspoon of cumin seeds, and 1/4 teaspoon of red chili 🌶 powder. Mix these dry ingredients. Then add ghee I.e. clarified butter 🧈, gradually and start to mix using hands. Rub the flour with Ghee until it looks slightly crumbly and starts to hold a shape when pressed in between your hands. Now gradually add water as required and knead a soft and smooth dough. Cover and keep the dough to rest for 5 minutes and you are good to go.Rolling and Cutting of the Samosa dough ~Uncover and divide into 6 to 7 dough balls and roll these thin one by one. Once I rolled out the dough ball I used a round shaped cutter to cut these out just to prepare even shaped samosas. Then further cut and divide the rolled-out dough right from the center as shown in the images below. Prepare all the samosa Patti together and keep it aside.Folding the Samosa Patti ~Next fold the samosa Patti from both sides overlapping to each other preparing it a triangular shaped kind of. This prepares a small pocket in the center. Clear up the space in between to fill the samosa stuffing. Put around 2 teaspoons of onion samosa stuffing that we prepared and close the edges with the help of your finger tips. Make sure to close these tight so that no spices comes out while you fry these. Simply deep fry these in hot oil until turns golden in color and looks crisp, Enjoy with your favorite chutney or sauces.
