Coconut Cookies. Chewy and so easy to prepare. These cookies are made of shredded dried coconut. Sauteed in some butter and sugar until browned and crisp. Cooled and chilled sometimes and then mixed with the cookie dough mixture. These are full of coconut flavor and simply melts into the mouth.

Taste and Texture ~

These are crisp at the corners and soft and chewy in the center.

Time to bake ~

Bake In a preheated oven at 360 degrees Fahrenheit for 10 minutes.

Short Summary for Coconut Cookies

Into a frying pan saute shredded dried coconut flakes in some butter until browned and crisp. Keep aside and allow to cool completely. Then refrigerate sometime to chill these. Mix flour, salt, baking powder, baking soda and keep aside.Into a mixing bowl mix butter and sugar and vanilla essence until soft and fluffy. Into this butter mixture add the dry mixture slowly and continue to mix to form a doughy mixture. Now, add the egg and beat for few minutes. The mixture crumbles and then turn soft and fluffy. Next, add fried coconuts into it and give it a nice mix.

Once mixed nicely, refrigerate this mixture for an hour or so. Take it out from the refrigerator and keep it outside for a few minutes as initially it is too hard to scoop. After a few minutes scoop it out with a help of an ice cream holder and line it up on a tray. Use parchment paper for best results. Line up the cookies keeping some distances in between because these spreads once baked. Press with the fork on the top of the cookie to flatten and make a design on the top. Sprinkle some dry shredded coconut. Bake and enjoy.

Bake at 350 degrees Fahrenheit for 10 minutes.

Put these on a cooling rack and allow them to cool.

Note: These are soft to touch when hot, but turns stiffer once cold.

Ingredients
  

  • 4 OZ (113g) Softened Butter (unsalted)
  • 3/4 Cup Sugar (granulated)
  • 1 Cup All-purpose flour
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Baking powder
  • 1 teaspoon Vnilla essence

To fry the coconuts we need ~

  • 1 and 1/2 Cup Shredded coconut dry
  • 2 Tablespoons Sugar (granulated)
  • 2 Tablespoons Softened butter
