Into a frying pan saute shredded dried coconut flakes in some butter until browned and crisp. Keep aside and allow to cool completely. Then refrigerate sometime to chill these. Mix flour, salt, baking powder, baking soda and keep aside. Into a mixing bowl mix butter and sugar and vanilla essence until soft and fluffy. Into this butter mixture add the dry mixture slowly and continue to mix to form a doughy mixture. Now, add the fried coconuts into it and give it a nice mix. Once mixed nicely, refrigerate this mixture for an hour or so. Take it out from the refrigerator and keep it outside for a few minutes as initially it is too hard to scoop. After a few minutes scoop it out with a help of an ice cream holder and line it up on a tray. Use parchment paper for best results. Line up the cookies keeping some distances in between because these spreads once baked.
