The vegetable pancake recipe is an easy and tasty breakfast recipe, anyone can try at home. Lots of veggies could be added as per choice, to the recipe including some flour and eggs, mixed well together to prepare a pancake mix and then shallow fried in a frying pan 🍳 with some butter or oil in the shape of pancakes, and it gets ready within a few minutes.
It’s so quick and a hassle-free, no-fail recipe. I am so glad to find this out one day when I had a limited choice with the few veggies left on my shelf, and I tried making this out by mixing them with some eggs 🥚 and flour, and it turned out perfect. I recommend everyone to try this at least once at home. Just make sure to use a non-stick pan if you are preparing this for the first time. - Onions 🧅 1 medium thinly sliced (1 cup)
- Bell peppers 🫑 chopped 1 medium
- Cabbage 🥬 chopped 2 cups
- Carrots 🥕 cut into stripes 1/4 cup
- Beans finely chopped 1 cup
- Jalapeño 1 sliced
- Coriander leaves 🍃 chopped 3 tablespoons
- Spring onions chopped 2 tablespoons
- Salt to taste
- Black pepper powder to taste
- Ginger and garlic paste 1 and 1/2 teaspoons
- All-purpose flour 1 cup
- 3 large eggs 🥚
- Water 1/4 cup or as required
- Butter 🧈 to shallow fry
- Oil to spray on top of the pancakes

Step by step method to prepare Vegetable Pancake along with the images shown below ⬇️
Into a large bowl take some vegetables like one onion, thinly sliced around a cup,
Jalapeño 1 thinly sliced,
Some carrots 🥕 cut into stripes 1/4 cup,
Green beans chopped 1 cup,
Bell pepper chopped 1/2 a cup,
Spring onions are chopped 2 tablespoons, and coriander leaves 3 tablespoons chopped.
Cabbage 🥬 chopped 2 full cups,
Some salt 🧂 and pepper powder to sprinkle as per taste.
Ginger and Garlic paste 1 and 1/2 teaspoons.
Mix these
Crack 3 large eggs and lightly beat them using a fork.
Pour the eggs into the vegetable mixture
Mix
Gradually add 1 cup of All-Purpose flour along with 1/4 cup of water and mix. You may add water as required. The consistency must be thick, not flowy or runny.
Once mixed nicely, let the mixture rest 2 to 5 minutes
FRYING ~
Give it a mix just before frying, and scoop out some portion. Spread nicely a layer of the mixture into a frying pan and shallow fry in low flame for about a few minutes. Both sides should be well cooked, and nicely turns golden brown in color.
Once spread nicely, let it cook sometimes, then press all around with the spatula to check how well it is cooked. If it moves easily without sticking to the pan this means the bottom side is cooked. You may spray some oil or ghee on the top, and immediately flip to turn to the other side.
As you see in the image below that the bottom side has cooked and turned slightly crisp, golden brown in color.
Flip to turn. Continue to cook keeping the flame low to medium.
Cook the other side well, until it turns golden brown in color.
Both sides need to be cooked well and could be enjoyed hot.
Enjoy hot with any sauces and chutneys of choice.
