As of my experience and learning by preparing pizza dough at home again and again I have come across the point that it is clearly a “wait time” game that is required to get the very best results in order to achieve great taste and texture. Preparing the dough before 24 hours of baking or “Overnight refrigerating or maybe longer surely “gets more time to rise slowly which makes a difference. The Pizza base or the bread comes out really soft and fluffy that I personally like.

This is especially when I experienced once I prepared the dough and could not bake it the same day as I thought. I kept it refrigerated for more than 24 hours and then finally baked it. Since that day I never ever baked the dough the same day I kneaded that 🙂 I surely kneaded my dough and refrigerated at least overnight to enjoy the next morning or during lunch or brunch time with my family and it turned out awesome.

Ingredients required to prepare soft and fluffy pizza bread/ Pizza bread recipe

  • All-purpose flour 4 cups
  • Instant Yeast 1 and 1/2 teaspoon
  • Sugar 3 to 4 tablespoons
  • Salt 1 tablespoon
  • Melted Butter 1/4 cup
  • Water 1 cup + 3/4 cup or 2 cups max

Other ingredients

  • Tomato 🍅 paste or any pizza sauce of choice
  • Mozzarella cheese
  • Salt to sprinkle
  • Oregano
  • Mixed blends herbs ( Italian )
  • Paprika

Bake time

25 to 30 minutes at 350 degrees Fahrenheit in a preheated oven

Points to remember:

  • Keeping the speed level at low while mixing, works better.
  • It takes a while to prepare the dough for pizza, It should be kneaded until the dough feels stretchy/elastic to touch. It should feel soft and smooth, non-sticky as well. 
  • Cover and refrigerate overnight for best results. As it helps the yeast to work nicely and slowly which provides structure to the bread.
  • Kneading well helps forms gluten into the dough which again provides structure to the bread.
  • Once the pizza dough rises it is important to press it down and flatten it to release all the air bubbles that has formed which was trapped inside the dough.

To prepare a soft and fluffy dough we need 4 cups of all-purpose flour. Into it add dry instant yeast 1 and a 1/2 teaspoons, salt 🧂 1 tablespoon, sugar 3 to 4 tablespoons, and mix all the dry ingredients nicely. Then by putting the bowl on the mixing stand set the speed at low and turn it on.

Once it starts to mix, slowly add water to it and prepare a smooth soft dough. As the dough just starts to form add the melted butter into it and continue to mix. It takes a while to make the dough soft and elastic in consistency. You can easily see the difference by touching. If it’s not sticky anymore and easy to stretch it’s done kneading the dough. Use some oil in a bowl and transfer the dough into it.

Finally, apply some oil on top of it and all around the dough, as well. Cover and keep inside the refrigerator overnight to let the yeast work slowly.

The next morning the dough feels thick and rises up. Press it down and flatten to release the air. Then by folding the dough backwords prepare a ball and place it back in a container for about 10 to 15 minutes for proofing the dough. It rises a little bit after some time. Press it down again and it’s ready to roll out on a tray.

Step by Step Method on preparing a soft and fluffy Pizza base/ Pizza Bread.

Into a large mixing bowl take 4 cups of all-purpose flour.

Next, add 1 and 1/2 teaspoons of yeast,

3 tablespoons of sugar,

1 tablespoon of salt, and give these a mix.

Give these dry ingredients a mix…

Keeping the speed at the lowest mix these by pouring water gradually into it. The water should be at room temperature.

The total water added is 1 and 3/4 cups. or 2 cups max.

Slowly continue to mix these until start to form a dough. At this point add 1/4 cup of melted butter into it and continue to mix further until the dough turns elastic and soft to touch. This step takes a while to prepare, it’s a little time-consuming but do not need to knead at all with your hands, so be patient, surely the outcome is really great.

Once you reach this point simply transfer into a bowl on top of some oil around 2 teaspoons of oil used.

Apply some oil on top of the dough as well. Cover and refrigerate overnight for best results.

The next morning take it out from the refrigerator. Press down to release any air.

Flatten and fold backward shaping it like a ball again and keep aside for 10 to 12 minutes for proofing.

The dough feels stretchy and is perfect

It puffs up a little after some time. Press it down again and flatten to spread upon the tray, ready to be baked.

Spread out some tomato paste or pizza sauce,

Sprinkle some oregano, dried or fresh

Some Salt

Mozzarella Cheese

Mixed blended herbs (Italian) into it,

Bake in a pre-heated oven for 30 to 35 minutes

Slice it up and enjoy it with your family and friends.
