Semolina Pancake/Sooji ka Pancake

Welcome to my blog! Today, I’m excited to share with you a recipe for Semolina Pancake (Sooji ka pancake) that you can make at home. This pancake is a delicious and healthy breakfast option that’s easy to make and perfect for busy mornings. Semolina is a coarse flour made from durum wheat that’s commonly used in Indian cuisine. It’s high in protein, fiber, and other essential nutrients, making it a great choice for a nutritious breakfast.

Ingredients-

  • Semolina 1 and 1/2 to 2 cups.
  • Yogurt 2 serving spoons (big spoons)
  • Green beans small chopped 2 tablespoons
  • Sliced onions 2 tablespoons
  • Thin-cut carrots 🥕 2 tablespoons
  • Frozen peas 1 tablespoon
  • Coriander leaves chopped 1 tablespoon
  • Some curry leaves
  • Coriander powder 1 teaspoon
  • Cumin powder 1 teaspoon
  • Red chili powder 1 teaspoon
  • Some salt 🧂
  • Green chili 1 chopped
  • Important note- Please add water 💦 as required. Make sure to add water only if required.

Here’s how to make it:

  1. In a large bowl, mix together the semolina, yogurt, and some water (until well combined to adjust the consistency) Avoid adding too much water. (The consistency of the mixture needs to be thick, not the pouring consistency)
  2. Add the salt, red chili powder, cumin powder, and coriander powder and mix well.
  3. Add all the veggies like green beans, sliced onions, thin-cut carrots, frozen peas, coriander leaves, curry leaves, and green chilies chopped.
  4. Heat a non-stick pan over medium heat. Add a little oil or ghee.
  5. Pour a ladleful of batter onto the pan and spread it out into a thin circle.
  6. Cook for 2-3 minutes on each side or until golden brown.
  7. Repeat with the remaining batter.

Serve hot with your favorite chutney or sauce.

Points to remember_

After mixing everything and preparing the batter. Refrigerate the mixture for 5 to 7 minutes for the best result. The combination should not be of pouring consistency. The mixture needs to be thick. Shallow fry in the required amount of ghee (clarified butter or oil). Use a nonstick frying pan for the best result. Enjoy hot with any sauces or chutney of your choice

While you shallow fry these Semolina cakes make sure to keep it open and cook. Do not cover it, because this mixture has a lot of veggies and while cooking these will release some water and make the pancake stick to the pan. So in order to avoid this we need to slowly open and cook these until slightly crisp and golden brown on each side.
