Ingredients required to prepare Semolina Dessert. An Aromatic Sooji Halwa

  • Semolina/Sooji 1 cup
  • Almond flour 1/2 cup
  • Milk 2 cups
  • Water 1 cup
  • Sugar 1 cup
  • Almonds – 2 tablespoons
  • Cashews – 2 tablespoons
  • Raisins – 2 tablespoons
  • Cardamom powder 1/2 teaspoon
  • Saffron or Kesar 1/4 teaspoon
  • Clarified butter 1/3 cup
  • Tutti-fruity 1/3 cup
  • Some extra tutti-fruity and Kesar strings to garnish at the top

Total cook time

  • Dry- roasting the Semolina 4 to 5 minutes
  • Cooking Halwa for 15 minutes
  • Total time required 20 to. 25 minutes

Directions to prepare Sooji Halwa. Semolina dessert 🍮

Dry-roast 1 cup of semolina into a pan for 3 to 4 minutes keeping the flame at the lowest. Keep aside and into another pan sauté some 2 tablespoons of cashews, and 2 tablespoons of almonds in 2 tablespoons of ghee/clarified butter. When these turn slightly golden in color, take them out. Put the semolina back to the heat and add the leftover clarified butter that is being used for frying the dry nuts into it. Then add in some extra around 2 tablespoons of more Ghee/Clarified butter into it and continuously stir and cook for 2 minutes. Add 2 cups of milk gradually followed by 1 cup of water. Give it a mix and Immediately add 1/2 of the sugar from 1 cup and mix. Once mixed well add 1/2 teaspoon of cardamom powder and 1/4 teaspoon of Kesar (saffron) into it and mix and cook few minutes.

Gradually the mixture thickens. Finally, at the end of the recipe add the leftover clarified butter and sugar and give it a mix. Cook a few minutes and it should be ready to serve and enjoyed.

Dry-roasting the semolina

Dry roast 1 cup of semolina (sooji)

Keeping the flame at lowest continuously stir and dry roast these for 2 to 3 minutes or until slightly turns golden brown in color and starts leaving a nice aroma. Once done keep aside for later use.

Frying Dry-Nuts for Sooji Halwa (Semolina dessert)

Add 2 tablespoons of ghee (clarified butter) into a separate pan

Sauté 2 tablespoons of cashews, and 2 tablespoons of Almonds for 2 minutes. When slightly turns golden brown take these out.

Also quickly sauté 2 tablespoons of raisins and take these out. (Sauté for few seconds or they turns too soft)

Cooking the Halwa

Put the dry roasted semolina back on to the flame milk 1 and a half cup gradually into it and mix.

Add the leftover clarified butter used to fry the dry nuts.

Add 2 tablespoons of clarified butter into it and mix

Mix and fry the mixture 2 minutes.

Add Almond flour 1/2 cup and mix

Pour 2 cups of milk slowly into it and mix

Give the mixture a quick mix

Immediately add 1 cup water after the milk has been added.

From 1 cup of sugar add 1/2 of the sugar in it and mix

Mix

Add cardamom powder 1/2 teaspoon

Kesar (saffron) 1/4 teaspoon

Slowly mix all the ingredients keeping the flame at low few minutes

You will see very soon the mixture thickens and bubbles starts to appears in the corner of the pan

At this point add rest of the sugar and mix

Finally add some more clarified butter into it and by continues stirring and mixing cook in low flame 🔥

Keep cooking and mixing.

Just right at the end of the recipe when you see the mixture is thick finally add the leftover ghee from 1/3 cup, add the fried dry nuts, raisins, and 1/3 cup of tutti-fruity into it and give it a mix.

Garnishing

Garnish with some extra tutti-frutti and few kesar threads at the top. And enjoy warm or cold.
