The fish pieces are being washed and cleaned thoroughly under running water and then marinated with some spices like coarsely ground dry red chili πΆ, turmeric powder, salt π§ and some sugar. Fish pieces are being coated well with these spices and marinated for about 10 minutes before being shallow fried in mustard oil, until turn nicely golden brown in color and cooked well.
These fried fish pieces are being dipped and cooked in aromatic curry which is again being prepared by using some aromatic whole spices mixed with powdered spices and some salt and sugar and cooked in mustard oil for achieving a strong flavor into the dish. Ingredients required to prepare Sea Bass Fish in spicy and aromatic curry. are as follows ~
For marinating the sea bass fish π pieces we need ~
- Sea bass fish π 10 pieces (medium cut and small mixed)
- Turmeric powder 2 teaspoons
- Fresh dry red chili πΆ ground 2 teaspoons
- Sugar 1 teaspoon
- Salt 1 teaspoon
For the curry π we need ~
- Mustard oil 1/4 cup or as required to fry the fish
- Cumin seeds 1 teaspoon
- Fenugreek seeds (methi) 1/4 teaspoon
- Cinnamon stick 1/2 inch
- Green cardamom 8
- Cloves 4
- Black cardamom 2 whole
- Dry red chili πΆ 2 whole
- Bay leaves π 3
- Garlic paste 2 teaspoons
- Ginger paste 2 teaspoons
- Onion paste 1 and 1/2 cups
- Cumin powder 1 teaspoon
- Coriander powder 1 teaspoon
- Dry red chili πΆ ground 1 teaspoon
- Garam masala powder 1 teaspoon
- Green chili 2 whole
- Tomato π paste 1 cup
- Sugar 1 teaspoon
- Salt π§ 1 teaspoon or as per taste
- Coriander leaves π chopped 3 tablespoons
- Water π§ 2 cups
- Chaat masala 1/2 teaspoon
- Garam masala 1/2 teaspoon

Washing and cleaning ~
Wash and clean the fish pieces nicely under running water. Drain out any excess water. Pat dry if required.
Marinating ~
Into the fish, pieces add 2 teaspoons of turmeric powder, ground dry-red chili πΆ 2 teaspoons, Salt π§ 1 teaspoon, and Sugar 1 teaspoon. Rub these spices nicely on the fish pieces using hands π and keep these marinated for 10 minutes.
Frying ~
After 10 minutes of marination, shallow fry them in hot mustard oil. Around 1/4 cup of mustard oil is being used to fry these fish pieces. Use more oil if required. Drop the fish pieces one by one slowly into the hot oil and shallow fry until turn nicely golden brown in color and cook well inside.
Preparing the curry ~
Into the same leftover oil then add 1 teaspoon of cumin seeds, 1/4 teaspoon of fenugreek seeds (methi), cinnamon stick 1/2 inch, green cardamom 8, cloves 4, black cardamom 2, dry-red chili πΆ 2, bay leaves π 3 and quickly sautΓ© these whole spices for few seconds. Then immediately add 2 teaspoons of garlic π§ paste and 2 teaspoons of ginger paste. SautΓ© these sometimes in low flame π₯ until the rawness of the garlic and ginger disappears.
Immediately add 1 and 1/2 cup of onion π§ paste and mix. Add 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, dry-red chili πΆ 1 teaspoon, garam masala powder 1 teaspoon, 2 whole green chiliβs, and mix. Cook π©βπ³ in low flame for a few minutes by continuous stirring. As soon as the rawness of the onions π§ disappears and is nicely cooked, it starts giving a nicely cooked aroma. At this point add tomato π paste 1 cup into it. Mix nicely and continue to cook few minutes. Then add sugar 1 teaspoon, salt 1 teaspoon, and give it a mix and continue to cook by frequent stirring for a few more minutes.
Adding the fish pieces into the curry ~
Drop the fried fish pieces one by one into the curry. Add chopped coriander leaves 3 tablespoons. Pour 2 cups of water π¦ , sprinkle 1/2 teaspoon of chaat masala, 1/2 teaspoon of garam masala powder, and gently stir. Cover and cook in slow flame π₯ for about 10 to 12 minutes or until done.
