Ingredients required to prepare Sabudana Sweet/Dessert recipe

  • Sabudana (SAGO) overnight soaked 3 cups
  • Sugar 1 and 1/2 cups
  • Desiccated coconut 🥥1/2 cup
  • Cardamom powder 1/2 teaspoon
  • Ghee (clarified butter) 3 teaspoons
  • Orange Food Coloring few drops
  • Water 1 tablespoon to mix the Food Color
  • 1 teaspoon of Pumpkin seeds dry-roasted or sautéed

Points to remember

Let Sabudana soak in water overnight or for more hours for the best result. Also, If soaking them for more than 24 hours then place these in the refrigerator completely dipped in the water.

Once nicely soaked in water you will see the granules looks fluffy and easily breaks once pressed by the finger tips.

Cook little extra time if using the big granules of Sabudana. Cooking slowly for a long time is the key. Smaller ones go well while you prepare any sweets or desserts.

Sabudana granules get translucent when being cooked. When these turn translucent and fluffy they are being cooked well and get softer which is of great use if any dessert recipes are made out of it.

Strain and discard the water in which these have been soaked and rinse them nicely 2 to 3 times with clean water. Leave Sabudana in the strainer to drain out any excess water that will drip out too.

Sautéing and cooking 🍳

Into a frying pan warm up 2 teaspoons of ghee I.e Clarified Butter 🧈 and add 3 cups of soaked and drained Sabudana into it. Stir and cook keeping the flame at low. Gradually you will see the color of the granules starts to get translucent and looks fluffy. This is when it means these have started cooking. At this point add sugar 1 and 1/2 cups, desiccated coconut 🥥 1/2 a cup, and 1/2 a teaspoon of cardamom powder. Slowly mix these and continue cooking further. Sugar melts and the mixture starts to look sticky.

Now add some orange food coloring by mixing into some water say around 1 tablespoon of water. Add and mix. After you have mixed the color add 1 teaspoon of roasted- or sautéed pumpkin seeds into it and mix. Cook until the mixture looks mushy and the granules absorb the color completely and get well cooked. The granules must look soft and fluffy at this point.

Note: For bigger Sabudana granules it is important to cook and make the mixture mushy and soft.

Once done cooking immediately transfer these into a container that has parchment paper placed at the bottom, to avoid sticking. Sprinkle some pumpkin seeds on the top to decorate. Or you may choose any other dry nuts of choice. Refrigerate sometime. Take it out cut it into desired pieces and enjoy.

Rub these using light hands while washing and rinsing

Drain out the rinsed water and wash again using clean water 2 to 3 times

Fill clean water and let these soak overnight or for a longer time. If soaking these for more than 24 hours kelp refrigerated and soaked in water. Then later you may use.

Heat up a frying pan and add 2 teaspoons of ghee (clarified butter) Add Sabudana into the pan and quickly stir. Cook and stir continuously on low flame. Within few minutes Sabudana starts to turn translucent and fluffy.

At this point add sugar 1 and 1/2 cups,

Desiccated coconut 1/2 cup,

Cardamom powder 1/2 a teaspoon,

Mix and cook few minutes. The sugar starts to melt and mixes well.

Now add some orange food coloring into it by mixing in some water.

Once the color mixes in well add sautéed pumpkin seeds 1 teaspoon

Add Ghee i.e clarified butter 1 teaspoon and mix and cook until you see the mixture looks mushy, the color coats well to the mixture and the consistency gets thick and perfect for setting in a container.

Transfer immediately into a container to set. Sprinkle few thinly sliced pumpkin seeds on the top to garnish or you may also choose any other dry nuts of choice.
