For preparing this banana pancake, quick and easy, a few common ingredients used such as a very ripe banana, All-purpose flour, sugar, some salt, 3 egg whites, 3 egg yolks, vanilla essence, with some butter which is required to cook this cake. For toppings, I have used some freshly chopped bananas with some blueberries along with some honey, and blueberry syrup/sauce. You may choose any fruits or fruit sauce or maple syrup for topping up your pancake.

Ingredients required to prepare Ripe Banana Pancake. Light and fluffy.

  • Very Ripe banana 1 (around 3/4 cup of pulp)
  • All-purpose flour 1 cup
  • Baking powder 1 teaspoon
  • Vanilla essence 1 teaspoon
  • Sugar 1/3 cup
  • Salt 1/4 teaspoon
  • Egg whites of 3 eggs
  • 3 egg yolks
  • Butter 1 tablespoon +some extra to fry the pancake

Directions to prepare Ripe Banana Pancake.

Use a ripe or a very ripe banana if you have. Mash it completely and keep aside.

Separate the egg yolks from the whites. Beat the egg whites along with the sugar for a few minutes or until turns fluffy and creamy inconsistency. Then add baking powder, vanilla essence, and the egg York’s into it and give it a quick mix.

Into a separate bowl take All-Purpose flour and a pinch of salt and mix. Then gradually add this mixture into the wet mixture and gently mix using a spatula or a hand manual hand beater. This step is usually required to be done gently and slowly because to avoid the mixture being over beaten. Note: The air that is created by beating the egg whites initially should not be destroyed completely. So as to keep the consistency light and fluffy we need to add and mix the flour slowly and gently. But yes also make sure to mix all the ingredients nicely, that is important too 🙂

Into a frying pan add some butter and spread all over the pan. Lower the flame and pour the batter into the pan. Cover and cook few minutes. Check-in between to make sure if it’s cooked or not. Uncover and flip and turn to the other side and pour in some butter to the sides to cook well and avoid sticking to the pan. Then cover and cook until done. The Banana pancake puffs up slightly and should look cooked well light and puffy at this point.

It’s now ready. Serve with some freshly sliced banana or any other fruits. Drizzle some honey or maple syrup, Blueberry syrup, or strawberry syrup on the top and enjoy. You may also add some whipped cream or cream cheese instead, Kids favorable recipe I must say.

Frying the Banana Pancake

Heat up a frying pan. Add 1 tablespoon of butter and spread the butter all around the pan.

Lower the flame and pour the batter

Cover and cook few minutes in low flame. In between check if required

After few minutes flip and turn the pancake to the other side

Pour in some butter to the sides to cook the other side well and to avoid sticking the pancake to the pan

Cover and cook a few minutes in low flame. Slowly at this point you will see that the pan cake puffs up and becomes light and fluffy. Looks yummy 🙂

Immediately transfer into a serving plate and chop some fresh banana on the top.

Serve with some freshly sliced banana or any other fruits. Drizzle some honey or maple syrup, Blueberry syrup, or strawberry syrup on the top and enjoy. You may also add some whipped cream or cream cheese to the top. Kids favorable recipe I must say.

Notes

Points to remember:-
You need to cook the pancake into a pan using some butter and cook on a low flame by covering it with a lid. Slow cooking helps the pancakes to cook well inside and outside both. Cook until turns light and fluffy and looks nice and golden brown on the top. 
Beating the egg whites until foamy helps create a fluffy and perfect cake. Turns out really soft and tastes delicious.
