A healthy and tasty recipe to try on as a main course meal 🥘 Rice Noodles with Chicken and Vegetables includes a lot of veggies, soft and juicy chicken chunks with broth, and the Rice Noodles are thoroughly dipped and cooked into this yummy soup mixture. The main ingredients that I have used are stir-fried rice noodles, canned soft and juicy chicken chunks dipped in water along with the mixture of broth, and in Veggies, I have used carrots 🥕, celery, squash, onions 🧅, garlic, fresh parsley 🌿. Spices include some salts, and black pepper powder, other ingredients are soy sauce, and lemon juice. At first, all the veggies are being slightly sautéed in oil and then the chicken chunks are being added. Veggies are then mixed and cooked thoroughly with chicken and broth mixture along with some water. Once the veggies and the chickens are cooked well and soft, rice noodles are being added along with some warm water in it and being cooked further until done. Lastly, sprinkle some salt, pepper powder, some soy sauce, and lemon juice, which are being added and mixed.

- 3 Canned chickens. 12.5 oz each can with chickens in water ( broth) inside.
- Rice Noodles 16 oz ( or add as required)
- Garlic 🧄 cloves chopped 3 tablespoons
- Onions finely chopped 3/4 cup
- Carrots 🥕 diced 1 cup
- Fresh Celery chopped into small pieces 2 cup
- Freshly chopped parsley 🌿 1/2 cup
- Squash 1 medium cut into cubes
- Salt 1 teaspoon or as per taste
- Black peppercorn powder 1 teaspoon
- Water 2 cups in total added ( add if required)
- Soy sauce 2 tablespoons
- Lemon juice 2 tablespoons
- Oil 2 tablespoons to sauté the veggies
Cook time
40 to 45 minutes.
Points to remember:
- At the start of the recipe make sure not to fry the onions and the garlic, Just saute few seconds and immediately add the other veggies to avoid burning.
- Cover and cook the vegetables until soft before adding the Rice Noodles into it
- I have used stir-fried rice Noodles for this recipe, so it took me 15 to 20 minutes to cook these. well. Cook time may vary depending on what Noodle you are using.
- Canned Chicken is softer and juicy in texture. If you are using fresh-cooked chicken then cook time may vary again for this reason.
- You may add any of your favorite veggies for preparing this meal.
- In place of water, you may add extra chicken broth 🙂

To prepare Noodles with Chicken and Vegetables we need to chop in some onions 🧅 some of the garlic cloves, and sauté them in some oil for few seconds and then add in the chopped carrots 🥕 celery, and freshly chopped parsley 🌿 and give these a quick mix. Add some squash cut into big cubes. Sauté these few minutes together and then add up the soft and juicy canned chicken chunks into it along with its water (Broth) with some extra water if required and give it a mix. Cover and let cook these for 30 minutes or until the veggies and the chickens get softer and the mixture looks soupy:)
At this point add some salt and black pepper powder and give it a stir. Then add the Rice Noodles along with some warm water into it. Let these cook slowly and simmer until the noodles cooked well and are soft. Lastly, add some soy sauce, and squeeze lemon juice, and mix. Serve and enjoy hot.

Into a large container add some oil and heat. Then add some chopped onions and garlic and stir for a few seconds. Do not let these change the color. Just sauté a few seconds.
Add chopped carrots 🥕, chopped celery, freshly chopped parsley 🌿 ,
Give it a mix
Add one medium squash cut into big cubes, and stir few minutes altogether.
Add 3 canned chicken cans into it along with its water (broth)
I am adding 1 cup of water but you may add more or less, as required. (Avoid adding too much water)
Cover and cook all the veggies and the chicken together for 30 minutes, or until soft and soupy.

As these look softer now add the other ingredients
At this point add some salt 🧂, black pepper powder and give it a mix.

Then add Rice noodles as required along with some warm water and continue cooking until the noodles are soft.
I have added a 1/2 more cup of warm water. Cover and cook 15 minutes or until the Noodles get softer. In place of water, you may also add some chicken or vegetable broth as well.
Open and give it a mix
Finally, squeeze out some lemon juice, Soy sauce and give it a mix…
Serve and enjoy hot.
