Potato and semolina with cheese pancakes are easy to prepare. Made with boiled potatoes, semolina, mozzarella cheese mixed with few spices and being shallow fried. These are great as a snack recipe or perfect if served as a breakfast. Quick and easy to prepare. Enjoy these easy potato Cheesy bites with the goodness of some semolina anytime. Ingredients required

  • Potatoes boiled and then grated 1 cup
  • Semolina 3/4 cup
  • Salt as required
  • Water 3/4 cup or as required
  • Yogurt 1/2 cup
  • Coriander leaves 🍃 chopped 2 to 3 tablespoons
  • Cumin powder 1 teaspoon
  • Garlic powder 1 teaspoon
  • Green chili’s chopped as required
  • Black pepper powder/ crushed 1 teaspoon
  • Butter or oil to fry

Directions to prepare Potato and Semolina with Cheese Pancakes 🥞

  • Wash, peel and cut the potatoes into big cubes. Then boil these. Allow to cool them.
  • Grate the potatoes using a grater. We need 1 cup of grated potatoes
  • Into a mixing bowl transfer the grated potatoes and add 3/4 cup of semolina
  • Salt as per taste
  • Add yogurt 1/2 cup into it and mix to combine
  • Coriander leaves chopped 2 to 3 tablespoons
  • Then add the spices like cumin powder, garlic powder, green chili’s chopped as required, and black pepper powder.
  • Mix and combine all the ingredients nicely to prepare a pancake batter of medium-thick consistency.
  • Heat a frying pan and apply some butter or oil to shallow fry these
  • Once the butter is heated pour the pancake batter and shallow fry in low flame. Flip and turn both sides to equally fry them until they turn golden brown in color.
  • Enjoy and serve hot with your choice of sauce or chutney.

Step by step method along with images shown below

Pre-Preparations

Clean, peel and cut two medium sized potatoes and boil them.

Grate the boiled potato pieces using a grater

I have used one full cup of boiled and grated potatoes

Mixing the ingredients

  • Into a mixing bowl transfer the grated potatoes
  • Add Semolina 3/4 cup

Put the grated potatoes and semolina in the mixing bowl.

Add salt as required

Pour in 3/4 cup of water

1/2 cup of thick yogurt

Combine the mixture

Add chopped coriander leaves 2 – 3 tablespoons

Cumin powder 1 teaspoon

Garlic powder 2 teaspoons

Black pepper powder or crushed 1 teaspoon

Mix all together

Add mozzarella cheese 1/2 cup

Give it a nice mix and leave it for 5 minutes

The consistency is a thick batter form. You may adjust a little bit by using some water to it.

Frying the pancakes

Heat a frying pan and apply butter or oil

Scoop out the batter with a large spatula or use a ice cream scooper to keep the amount same for all our pancakes.

As we see the sizes are same thus looks good when all cooked and served.

Pour the batter one by one into a frying pan 🍳

Press lightly on the top to flatten a little bit if required

Flip and turn within few minutes and continue cooking in low flame.

Cook 4 to 5 minutes in low flame or until turns golden brown in color. The more you cook these in low flame they get more stiff and crisp. So make sure to cook as long as you are comfortable with the texture. Hope this would help.

Flip and turn few times to get evenly cooked on both the sides.

As you can see in the images below how the color has changed thus changing the texture as well.

These are slightly crisp and cheesy and chewy.
