Ingredients required to prepare Okra and potato gravy

  • 1/4 cup of oil
  • Cumin seeds 1/2 teaspoon
  • 1/2 teaspoon Black cumin
  • Green chili’s 2
  • Asaphedita (hing) 1/4 teaspoon
  • 1 large onion thinly sliced
  • Ginger 1 teaspoon
  • Garlic paste 1 teaspoon
  • Cumin powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Garam masala powder 1/2 teaspoon
  • Turmeric 1/4 teaspoon
  • Okra Bhindi cut into small pieces 2 cups
  • Potato chopped 1 cup
  • Salt as per taste
  • 1/2 cup yogurt
  • Red chili powder 1 teaspoon
  • Little water to adjust the consistency
  • Sprinkle some chaat masala powder
  • Some chopped coriander leaves

Heat up some oil and add shahi jeera (cumin seeds), along with some black cumin seeds and let these sputter a few seconds, then add whole green chilis and asafetida (hing) and quickly saute. Immediately add thinly sliced onions and fry until translucent. Add ginger and garlic paste and mix to saute until the rawness of the garlic disappears. Next, add cumin powder, coriander powder, garam masala powder, turmeric powder, and mix to saute.

Add chopped okra and potatoes and continue to cook by frequent stirring. Add some salt as required and mix. Once the okra and the potatoes are 90 percent cooked whisk some yogurt along with some red chili powder and little water to adjust the consistency and pour into the pan. Mix nicely. Sprinkle some chaat masala and chopped coriander leaves. Cover and cook in slow flame for a few minutes or until done.

Step by Step directions to prepare Okra and potato gravy along with the images shown below

Heat 1/4 cup of oil. Add (Shahi zeera) Cumin seeds and black cumin seeds and let these to splutter. Immediately after few seconds add green chilis and give it a quick saute.

Add Asaephedita (hing) and give it a quick mix

Next, add thin sliced onions and saute until translucent. Then add ginger and garlic paste into it and continue to stir and fry few minutes. Once the onions looks fried and the rawness of the garlic dissapears add the powdered spices.

Add cumin powder, coriander powder, garam masala powder, and turmeric powder into it and give it a quick saute along with the onions.

Now add Okra/bhindi chopped into small pieces, and some potatoes cut into small cubes. Continue to stir and fry keeping the flame at low to medium.

Add some salt as per taste and give it a mix.

Once the okra and the potatoes are 90 percent cooked. Whisk yogurt and red chili powder together into a bowl and pour into the pan.

Add some water to adjust the consistebcy, and nicely mix. Continue to cook sometime.

Sprinkle some chaat masala

Sprinkle some coriander leaves and mix gently.

Cover and cook 10 minutes on slow flame or until done.
