This is Mutton Rogan josh recipe made with goat meat. Describing the easiest way to make at home. This is basically very famous recipe of India and various other parts of country. This is special delicacy dish of Kashmir. This could be enjoyed with rice or breads. Also this curry is a soup textured curry which tastes awesome and could be enjoyed in the form of soup 🍲

Ingredients for Mutton Rogan josh:

  • 1.5 kg Mutton/goat meat
  • 3 medium sized onion finely chopped
  • 1 cup of tomato paste
  • 1/4 cup of ginger
  • 1/4 cup of garlic
  • Salt as per taste
  • 1/4 cup yogurt

Spices:

  • 10 cloves
  • 5-6 bay leaves
  • 4 black big cardamom
  • 5 small cardamom
  • 1 stick cinnamon
  • 1/4 cup of fennel seeds
  • 1/4 cup of cumin seeds
  • 1 tbs of non spicy chili powder for color

Steps to follow before we start preparing this:

  • Grind all the whole spices mentioned above together and make it powdered form
  • Wash thoroughly and clean the mutton before use.
  • Whisk the yogurt before use
  • Grate ginger and garlic
  • Also some finely sliced ginger for later use

Preparation:

  • Firstly, heat the cooker. Add 3 tbs of regular oil.
  • Secondly, add some chopped onions into it
  • Thirdly, add 1 tsp of ginger (grated)
  • Finally, add 1 tsp of garlic (grated)

Add the mutton pieces and fry for sometime. When you see the color and texture changed when it has been fried for sometime.

Then add 5 to 6 cups of water.

Let it cook till 6 to 7 whistles. I choose to Cook the mutton really soft because the actual texture of the Rogan Josh was soup textured that i tasted since childhood and it use to taste awesome.

Cooking the Spices:

Into a pan add 3 tbsp of mustard oil. Once it is heated add rest of the chopped onions, ginger and garlic, Add all the spices, and 1 tbs of salt or salt as per your taste. Fry them for sometime say about a minute or so. Once they change in color and looks little fried add 3 cups of water and let it boil. Boil for sometime.

Combine:

Once the water has reduced a little and you see change in texture add the cooked mutton pieces into the prepared spices along with water that has been used to cook the mutton. Now just leave it to boil for at-least 20 minutes or as long as you see the gravy/curry gets thicker.

Note: For sometime let it boil uncovered and then cover it with a lid. Keep the flame medium to high.

Once you see the gravy looks good add 1/2 a cup of whipped yogurt into it and stir.

Add 1 tbs of non spicy chili powder

Cook another few minutes by covering the lid.

Final step: Into a small pan add one tsp of oil and heat. Put 1 tbs of fennel seeds into it and let it splatter. Then add some thin sliced pieces of ginger and sauté. Add them into the mutton gravy/curry and give it a mix. Cover again and let it simmer 1 minute and you are done.

Your amazing mutton rogan josh is ready to be served.

Enjoy this gravy/ curry with bread, naan (Indian bread) or rice or you may enjoy this soup textured gravy just plain.
