Lime popsicles are super refreshing and soothing to the throat. The mild spicy popsicles are a great way to satisfy hot wether thirst with a punch 🤛 of mixed fresh herbs and spicy flavor. A new way of enjoying the ice pops I must say. It tastes very similar to sweet and sour limbu paani with some extra added leafy flavor. Way too easy to prepare and healthy as well. I personally enjoyed the light spiciness in these popsicles which is different obviously from other common ones. Ingredients required to prepare Lime Popsicles

  • Lime or lemon juice 1/4 cup
  • Cornstarch 1 tablespoon
  • Sugar 1/3 cup
  • Water 2 cups
  • Mint leaves 4 to 5 tablespoons
  • Coriander leaves 🍃 2 tablespoons
  • Black peppercorns 12 to 15
  • Black salt 1/4 teaspoon
  • Ginger 1/2 inch
  • Lime Peels. Add some

Total time to prepare

  • Time to prepare the ice pop mixture 10- 15 minutes
  • Wait time – Overnight for best results

Directions to prepare Lime popsicles. Refreshing taste and flavor.

Simply use washed and clean mint and coriander leaves. Into a grinder add the fresh leaves, few black peppercorns, a little bit of ginger, a pinch of black salt, and add 1 cup of water to grind these to help prepare a refreshing juice. Transfer this green leaves mixture into a saucepan and into it then add 1/3 cup of sugar and some lime peels. Boil and cook this mixture in medium flame for 2 minutes. Finally, add the cornstarch slurry slowly into the boiling mixture and cook.

To prepare cornstarch slurry use few limes and squeeze out the juice. We need 1/4 cup of lime juice and 1 tablespoon of cornstarch and by mixing these two nicely prepare a slurry to add into the boiling mixture. Once the slurry is being added give it a nice mix and continue to boil on a medium flame for 5 more minutes. Make sure to occasionally stir and cook this mixture. When the mixture looks slightly thick (Not too thick not too thin) turn off the flame and strain out the juice. The total time required to cook this mixture is 7 minutes. Do not overcook as well. Allow the mixture to cool and then transfer into the ice pop molds. Refrigerate overnight and enjoy these fresh and spicy lime ice popsicles anytime.

Grinding the ingredients

Wash and clean the coriander and mint leaves. Use 4 tablespoons of mint leaves and put it into the grinding jar

Add 12 -15 pepper corns

Coriander leaves 2 tablespoons

1/2 a inch of ginger

Add water 1 cup into the grinding jar 🏺

1/4 teaspoons of black salt

Close the lid and grind these all

Once the mixture is ready keep aside.

Preparing cornstarch slurry

Squeeze out lime or lemon juice

Measure the juice 1/4 cup and add 1 tablespoon of cornstarch into it.

Add cornstarch to the lime juice and mix well to prepare a cornstarch slurry.

Once the cornstarch slurry is ready keep aside for later use

Peeling the lime

Peal some of the lime skin and keep aside

Mixing and cooking the juice

Transfer the leaves mixture into a sauce pan

Add 1/3 cup of sugar

Few of the Lime peels

Add one more cup of water

Stir to dissolve the sugar

Cooking the mixture

Boil and cook the mixture 2 minutes on medium flame initially

Stir it occasionally and cook

Adding of the cornstarch slurry that we prepared into the boiling mixture

Stir well and cook 5 more minutes on medium flame 🔥 Total time required to cook this is 7 minutes. The mixture should nit be too thick or thin.

When you see the consistency not too thick or thin. Turn off the flame.

Straining the juice

Strain the juice and allow it to cool sometime

Allowing it to cool and pouring into the mold.

Transfer into the ice cream or ice pop molds

Freezing

Freeze overnight. Take it out and quick dip in to the water to release the ice pops.
