Ingredients required to prepare Juicy Baked Chicken Thighs

  • Chicken thighs 1.61 LBS
  • Tomato paste 2/3 cup
  • Sprinkle some black pepper powder
  • 1 teaspoon dried oregano
  • Sprinkle some paprika
  • Sprinkle some dried parsley
  • Cumin powder 1 teaspoon
  • Olive oil 1/3 cup
  • Sprinkle salt as required
  • 6 to 7 garlic cloves finely chopped
  • Squeeze 1/2 of the lemon juice
  • Some sliced onions
  • One large tomato sliced
  • Mozerella cheese around 1 and 1/2 cup

Wash and pat dry chicken thigh pieces. Rub chicken thighs nicely with thick tomato paste and some spices like black pepper powder, oregano, parsley, salt, paprika, cumin powder, lemon juice, a few garlic cloves finely chopped, and olive oil. Mix all these ingredients nicely with the chicken thighs and keep this marinated for 30 minutes.

Prepare the baking pan by pouring a good amount of olive oil and placing some sliced onions all over it creating a bed to place chicken pieces on top of it. Next, place chicken thighs on top of the onions. Tuck some sliced onions and tomatoes in between and top of the chicken pieces thighs.

Sprinkle a layer of Mozerella cheese nicely all over it along with some sprinkles of oregano and black pepper powder. Preheat the oven at 350 degrees Fnheight and bake for around 38 minutes or until the top of it turns nicely golden brown in color.

Step by Step directions to prepare Juicy Baked Chicken thighs.

Wash and pat dry boneless chicken thighs 1.61 Lbs.

Add 2/3 cup of tomato paste, sprinkle some black pepper powder, dry oregano 1 teaspoon, dried parsley, sprinkle some paprika, cumin powder 1 teaspoon, some salt,

Pour 3 to 4 tablespoons of olive oil. Total olive oil used is 1/3 cup.

Mixing and marinating chicken thighs ~

Rub the spices and the tomato paste nicely on the chicken thighs.

Add 6 to 7 garlic cloves finely chopped.

Sqeeze out 1/2 of the lemon juice and give these a nice mix using hands. Keep this marinated for 30 minutes.

Into a baking container pour the rest of the olive oil all over the container. Then arrage some sliced onions all over the base to create a bed for the chicken pieces to cook nicely. Place the chicken pieces on top of the onions. Place 1 large tomato sliced, all around to give the dish more juice.

Tuck some sliced onions and 1 large tomato in between the chicken pieces and on the top.

Sprinkle around 1 and a 1/2 cup of mozerella cheese on the top along with some sprinkles of black pepper powder and oregano and its ready to bake.

BAKING :

Bake this in a preheated oven at 350 degrees Fahrenheit for about 48 minutes or until you see the top of it turn nicely golden brown and inside is cooked well. The baking pan used to bake this is 8″x 8″. This baked chicken thigh is so juicy and delicious. Enjoy this with steamed rice or any bread of choice. Also, this goes well with spaghetti and pasta.
