These are amazing coconut cookie bites with a punch of jelly beans in the center which makes them different from normal coconut cookies. It adds up an extra something in the center. Jelly bean coconut cookies are made with Egg whites, Plain flour, coconut flour, and sugar. These are simple and easy to make and tastes delicious. Check the detailed ingredients and measurements below.

Texture:

The texture of the cookie is soft and dry because the recommended baking time is between 11 to 13 minutes max. I choose to bake these for a little less time because to prevent burning at the bottom. So keeping this in mind bake them for less time and check the bottom once, while you bake these.

Ingredients used:

2 egg whites

Plain flour 1 cup

Coconut powder 1/2 cup

Melted butter 1/2 cup

Jelly beans to decorate

Icing sugar 1 and 1/2 cup

Baking powder 1/4 tsp

Baking soda 1/4 tsp

Some extra coconut powder for coating

Instructions:

Into a bowl take 1/2 cup of melted butter and add 1/2 cup of icing sugar and mix until fluffy and the sugar dissolves well. Then add 1/4 tsp of baking powder, 1/4 tsp of baking soda, and 1/4 tsp of cardamom powder to get a nice smell and mix them all. Gradually add coconut powder 1/2 cup and 1 cup plain flour into it and mix. Use hands or a machine to mix it nicely and make a cookie dough.

Note: Mixing nicely is very important because baking soda and baking powder need to be mixed well.

Steps to follow:

Into the melted butter add icing sugar, 2 egg whites, baking powder, and baking soda, and beat them nicely until smooth and fluffy.

Into the above mixture added Plain flour and coconut powder and then mix nicely to make a dough.

Shaping up the cookies:

Because of equal measurement and to make all the cookies same-sized, I used a measuring spoon i.e 1tbsp of cookie dough, and made it round-shaped and then by pressing it in between the center of your palm flatten them a little and insert a jelly bean in the center of each cookie. I personally love to put something in the center because I think these cookies look really gorgeous on adding these colorful jelly beans in the center and also it adds up some extra flavor into it.

Take a small portion of the dough into the hand and make a ball and flatten them a little bit by pressing in between your palms.

Once done with shaping coat each of the cookies with some coconut powder. Roll both sides and place all the shaped cookies onto the baking tray and put one jelly bean into each of the cookies by pressing with your fingertips and applying some melted butter on top of the cookies as shown in the image below.

Baking:

Onto a baking tray place parchment paper and then place all the cookies. Preheat the oven at 350 degrees Fahrenheit before placing them into the oven and bake them for around 11 to 13 minutes or until you see thin light cracks on the top of the cookies. Do not overbake. Avoid burning at the bottom. Check the bottom of the cookies after 10 to 11 minutes and then decide whether you need to bake it a little more or not.

Place them on a baking sheet and bake them at 350 degrees Fahrenheit for 12 to 13 minutes.

Cooling:

Once done baking place them on a cooling rack immediately so as to avoid burning to the bottom.
