About Eggs and Potato Creamy Curry:

This is egg and potato creamy curry or gravy recipe. It is very simple and easy to make. You may have it with breads, plain rice or fried rice. You can even have it just plain. Since it has potatoes it’s filling. It is creamy and very yummy. My kids loves this dish.

Pre-preparations:

For preparing Egg and Potato Creamy Curry, first of all, take one large sized potato and peel it. Than wash is properly and than cut it into pieces. And finally boil it.

After that, boil 8 eggs and peel them. Keep them aside. Once they cooled, cut them into two halves.

Finally, I have used one small sized onion. It gave me around 1/4th cup of onion paste.

Condiments:

Use 1 1/2tbsp of salt or as per taste.

Cardamom 1tbsp and Black pepper 1tbsp crushed or powdered form.

Cream should be room temperature.

Ingredients:

  • Potato 1 large around 2 cups in pieces.
  • Boiled eggs 8
  • One small onion paste i.e. around 1/4th cup
  • Refined oil 2tbsp
  • Pepper powder 1tbsp
  • Cardamom powder 1tbsp
  • Cumin powder 1tsp
  • Coriander 1tsp
  • Garam Masala 1tsp
  • Salt 1tbsp or as per taste
  • Cream 1 and a 1/2 cup
  • Water 2 cups

How to prepare:

First of all, In a thick bottomed flat pan heat 2tbsp of oil. Once the oil is heated (keep the flame low) and add onion paste. Keep stirring the paste for a while. Add little water if needed don’t let it burn.

After that, put pepper powder and cardamom powder and mix.

Finally, add cumin powder, coriander powder, and garam masala powder.

Stir and add little water around 1tbsp and let it cook sometime.

Add 1 and a half cup of cream into it and mix.

Stir for a while and let the cream get heated and then add 1 cup of water to the mix.

Let it cook for about a minute or until you see the gravy gets thicker.

At this moment, put the eggs into the pan one by one.

Check the salt here. Salt as per taste.

Add green chilies if you prefer it spicy and hot.

Coat the eggs with the cream gravy slowly with the help of a spoon or spatula. Here If you need to add a little water again add a little bit but not too much. Then cover it and let it simmer about a minute or two.

Then open the lid and slowly stir and check the consistency of the gravy. It should be thick and creamy.

Garnishing and Serving tips:

You can garnish it with little coriander leaves on top. But putting coriander leaves is optional.

Serving Eggs and Potato Creamy Curry

It can be served with hot and steamed rice (any variety).

It goes very well with breads as well. Specially with Indian breads.
