Creamy Coconut chicken with vegetables.

Need a change from regular everyday meal ? Must try this Creamy Coconut chicken recipe. One pot dish easy, quick, and healthy. The nutty and creamy flavor of the peanuts and coconut cream along with the chicken and veggies makes it so flavorful that it’s like a treat for ourselves or to someone you want to serve. So below is the recipe.

Ingredients for Creamy Coconut chicken:

  • Boneless chicken ( 3 pounds approximately) chicken thighs or preferred chicken meat)
  • Coconut oil – 3 tbsp
  • Onion – one small chopped
  • Ginger paste – 1/2 tbsp
  • Garlic paste – 1 tbsp
  • Coconut cream – 2 cups
  • Peanuts -1/2 cup soaked in water for 15-20 min
  • Salt to taste.

Vegetables:

  • Bell peppers – one medium
  • Beans – 7 to 8 string beans
  • Carrot – 1 medium sized carrot sliced

Spices:

  • Mustard seeds – 1 tsp
  • Garam masala – one tsp
  • Cilantro leaves
  • Tomato ketchup – 2 tsp

Preparation:

Grind the onion and peanuts together and make a paste out of it. In a pan heat Coconut oil and add mustard seeds and onion and peanut paste. Stir it till the onion and peanuts changes little brown in color. Then add the vegetables i.e string beans, carrots and bell pepper.

Mix well and add garam masala and cumin powder into it. Then add pieces of boneless chicken and mix slowly along with some water. Cover and cook until the chicken oozes out water and is half way cooked. Then add salt, Garam masala on the top and coconut cream into it.

Mix and cover it with a lid and let it cook for 15 to 20 minutes in low flame. Keep checking in between if required and stir. After sometime open and check and add cilantro and green chilies as per taste. Cover and cook until the chicken is cooked thoroughly and the gravy leaves the oil. And you are all done-ready to serve with steamed rice or Indian breads.
