Cookie cakes are simply awesome in taste. And texture-wise it gives a feeling of a cookie and a cake. It will give you a feeling that you are eating a combination of both! A cookie and a cake. So it’s basically a mixture of both. In other words, it is not as soft as a cake and not as firm as a cookie. So let’s try this form of a cookie cake:)

This cookie is made with cashew paste to make it taste better and more delicious than any normal cookie cakes πŸ˜‹

Since Christmas πŸŽ„ time is approaching I want to share some yummy cookie recipes in my recent posts.

It is a very simple and easy to follow recipe. You just need few ingredients to mix inn and you will be all set to put it on the table warm or cold. It is yummy for sure.

Let’s check the ingredients

  1. White cake mix flour between 2 to 2 and a 1/2 cups
  2. Cashew paste 1 cup
  3. 2 eggs
  4. Light Brown sugar or a mixture of (half-light brown and white sugar) 1/2 cup
  5. Vanilla essence 1 tsp
  6. Salt 1 tsp
  7. Baking powder 1 tsp
  8. Baking soda 1 tsp
  9. Unsalted Butter 2 OZ melted form
  10. Note: Use complete white sugar in place of brown sugar if you want to add more whiteness to your cookies.

Directions:

Into a bowl crack two eggs and mix. Beat it really nice. Add a pinch of salt around 1 tsp, 1 tsp of vanilla essence, baking powder 1tsp, baking soda 1 tsp, unsalted butter 2oz ( melted form) and mix nicely.

Then add 1 cup of cashew paste into it. Gradually start adding 2 to 2 and 1/2 cups of white cake mix into it because this helps to mix the flour nicely and the mixture becomes smooth and soft to touch without forming any lumps.

The mixture of this should be easy to scoop off with a cookie scooper or an ice cream scooper but should not be too soft as well. Note: Make sure you adjust the amount of cake mix between 2 to 2 and 1/2 cups if needed because you need the right consistency of the cookie mixture. The dough should not be too soft or too stiff. It should be easy to scoop out after taken out of the refrigerator. The picture attached below will give you a better idea. It is basically a cookie dough but not too hard. We don’t need to roll out, we just need to scoop it out with an ice cream scooper or a cookie scooper.

Baking:

Into a baking tray put parchment paper and place the cookie dough in line leaving some space in between because once it is baked it will spread a little so they need a free space around them to avoid sticking to each other.

Preheat the oven at 3:50 F and place them into the oven and bake it for 10 to 15 minutes. Or until you see it looks slightly browned. You can bake it a little less as well to keep its color white. These look beautiful. You may also check the center of the cookie by inserting a toothpick to make sure it baked nice. If the toothpick comes out clear you are all set to take it out of the oven.

Serve:

Serve them warm or cold they just taste amazing. You may also decorate them a little by putting some light icing on top and sprinkle some sugar crystals but I must say the choice is completely yours.

Ways of making this cookie and getting the best results as per your choice:

Tips that can improve making this cookie cakes as per your choice so try making this cookie cake with combining white and light brown sugar or make it with just dark brown sugar or just plain white sugar. The choice is yours.

  • Just white sugar cookie results in more white in color and little dry in texture.
  • Just dark brown sugar gives softer cookie cakes than white sugar
  • A mixture of white sugar and light brown sugar gives medium-textured cookie cakes. Overall there would be a slight difference in color and texture in all the three ways mentioned here.

The texture that I achieved for the cookie cakes shown in the picture below is darker in color because of using complete dark brown sugar. These are slightly crispy on the top and bottom but inside is soft and yummy. Rest all the steps and the ingredients are the same as I mentioned above.
