Chickpea Salad with Tofu, cucumbers, avocados. Full of protein and vitamin-packed salad is quick and easy to prepare. To prepare this you need soaked chickpeas. These are being soaked overnight and the other day drain out the water and use.

To enhance the taste of the chickpeas I am going to slightly stir-fry these in some oil mixed with some salt and red chili powder. Sauté them for about a minute or two and allow them to cool. In the same way, I am going to sauté the tofu cut into cubes. Season tofu with some salt as well if you like. These tofus are stir-fry tofu that I found in the shop and could be sautéed easily.   • Oil 1 teaspoon
  • Chickpeas overnight soaked 1 and 1/2 cups
  • Salt as per taste
  • Red chili powder 1 teaspoon
  • Tofu 349g (12.8 oz)
  • Cucumber 2 medium-sized chopped
  • Avocados 2 cut and sliced
  • Onion 1 medium-sized and roughly chopped
  • Tomato 1 small-sized chopped
  • Lime 1 medium-sized. Squeeze the juice and mix
  • Chopped cilantro 1/2 cup chopped
  • Pickle oil as required
  • Black pepper powder as required

I am choosing the red chili pickle oil as I personally like to have some spicy salads on my plate :).

At the end sprinkle some salt and pepper. Give these a nice mix. Once done with mixing transfer these into a serving plate and just before you serve these gently add the tofus in the center of the plate. Make sure not to stir and mix the tofus together as these are so soft and easily break.

Choose tofu that is firm and could be stir-fried. Make sure the chickpeas are being completely dipped in water and left to soak overnight before you stir-fry these. You may also add some salt into the chickpeas while soaking these.
