Cabbage and pineapple fried rice 🍚 is a perfect vegetarian dish that could be prepared for lunch or dinner. Quick and delicious. The rice is being fried and sautéed with fried and finely chopped cabbage and freshly chopped pineapples along with some colorful bell peppers 🫑 and some spices and sauces. - Cooked and cold rice 2 cups (preferably long grain basmati rice)
- Butter or oil 2 tablespoons
- Cabbage finely chopped 1 cup
- Pineapples 🍍 3/4 cup chopped into small pieces
- Onion 1/3 cup
- Green chili finely 1 chopped
- Garlic cloves 5 thinly sliced
- Red chili powder 1/2 teaspoon
- Crushed black pepper 1/2 teaspoon
- Salt sprinkle some as per taste
- Dark Soy sauce 1 and 1/2 tablespoons
- Red bell pepper 1/2 cut into pieces
- Green bell pepper 1/2 cut into pieces
- Cashews raw 7-8
- Sesame seeds 1 teaspoon

Directions to prepare cabbage and pineapple fried rice
Into a wok heat some butter. Once the butter is heated add some chopped green chili and thinly sliced garlic and sauté them. The nice aroma starts to come. Then add ginger and garlic paste and stir. Immediately add finely chopped cabbage and crushed black pepper 1/2 teaspoon and give it a quick mix. Immediately then add chopped onions into it and give it a quick sauté. Then by adding some red chili powder fry them for about a minute. The texture changes a little bit. At this point add colorful bell peppers 🫑 and sauté for about a minute.
Next add the chopped pineapples, few raw cashews, a teaspoon of sesame seeds, and by sprinkling some salt fry these for about 2 minutes. Well, do not overcook the bell peppers
Now add cooked and cold rice into it and mix. Choose long grain nonsticky rice 🍚 preferably basmati rice to prepare this for best results. Mix and cook the rice on medium to high flame well, along with the other ingredients for some time.
At the end add some soy sauce and sauté for 2 minutes. Mixing and cooking rice with soy sauce at the end enhances the taste and flavor of the fried rice. It smells good and different just like the restaurants.

Into a wok add 2 tablespoons of butter 🧈
Once the butter melts and hot add green chili chopped 1 teaspoon
Immediately add 5 garlic cloves thinly sliced and quickly sauté them
These turns aromatic within few seconds
Then add ginger and garlic paste 1/2 teaspoons each and mix
Add 1 cup of finely chopped cabbage
Crushed black pepper 1/2 teaspoon
Give it a quick mix
Immediately add 1/3 cup of chopped onion
Quickly mix and sauté
Then add Red chili powder 1/2 teaspoon
Fry one minute
The texture slightly changes
Add colorful bell peppers 🫑 half of each red and green.
Bell peppers being added. Stir and fry these for about a minute.
Then add chopped pineapples 3/4 cup into it
Stir to mix well
Immediately add some raw cashews around 7-8
1 teaspoon of sesame seeds
Sprinkle a little bit of salt as per taste.
Fry these nicely for 2 minutes. Make sure not to overcook the bell peppers 🫑
Now at this point add the cooked and cold rice 2 cups.
Preferably use any non-sticky long grain basmati rice for the best results
Mix and cook few minutes on medium to high flame 🔥
At the end add 1 and 1/2 tablespoons of soy sauce and stir and fry in soy sauce until looks nice and done.
Tip 1- Slightly less cooked rice works great for frying
