Coconut milk Vanilla pudding is a recipe made with just 3 ingredients, Coconut milk (unsweetened), vanilla pudding powder, and sugar. It’s creamy and thick in texture and melts into the mouth leaving its amazing flavor and sweetness which I personally cherish. A very easy to make a dessert I must say. It’s soft and smooth and tastes awesome.

Usually, I’m a person who wanted to try everything from scratch most possibly using products that are commonly used at home. During these quarantine days, I tried many new things to add some extra taste and flavor into my life to cheer myself and most importantly the things that could be easily made and I can enjoy. To add little extra fun I’m using a ready-made pack of vanilla pudding powder that’s easy and tastes great without needing many ingredients especially during these quarantine days it’s a great way to add sweetness as a dessert 🍮 into our lives. Sometimes I like to put less effort and enjoy more. But there are definitely some other ways we can make this recipe using a few common ingredients that are already available in every home. Especially homes with kids.
You can try making this dish if you want to celebrate National Vanilla Pudding Day sometime which is celebrated once in a year.

Ingredients needed for Coconut milk vanilla pudding recipe.
Coconut milk: 1 cup ( unsweetened)
Vanilla pudding powder: 3 tablespoons
Sugar: 2 tablespoons
Directions to make Coconut milk Vanilla pudding are as follows:
Into a pan add 1 cup of coconut milk ( unsweetened) and put the flame on. Add 2 tablespoon of sugar and by keeping the flame low stir until the granulated sugar dissolves completely. Continue cooking in low flame by frequent stirring.
How to prepare Vanilla pudding mixture:
Into a separate bowl take 3 tablespoons of vanilla pudding powder and by adding a little lukewarm water into it make a smooth lump-free mixture.
Add this vanilla pudding mixture into the boiling coconut mixture. Add gradually and keep stirring continuously. Please note: The flame should be low throughout the process.
By this continuous stirring and cooking process, the mixture gradually thickens. The consistency should be “easy flow but a thick flow”. As soon as you see the thick bubbles start to appear on the sides of the pan turn of the flame and stop cooking. Immediately transfer the mixture into another bowl.
Allow the mixture to cool. It should be easy to touch. Then wrap it up with a food plastic wrapper and then refrigerate it for few 3 to 4 hours.
Serving tips:
Serve it cold or you may also choose to serve warm as per your choice. The only difference is that after refrigerating the mixture solidifies a and the texture changes a little bit. But it is okay to enjoy warm sometime after cooking without refrigeration.

Cook time 30 minutes approx
Refrigeration hours: 3 or more hours
Tips:
Make sure to cook it in low flame by through stirring process.
Cook until you see thick bubbles appears on the sides and the mixture thickens.
Mix the vanilla pudding powder with the lukewarm water for a lump a lump free mixture. Avoid using too much of water.
