About the recipe:
This is sweet and sour crunchy and crispy vegetable poha recipe i.e Flattened Rice flakes with vegetables 🍅 🍃
What is poha?
Poha is made up of flattened rice. In English, we say rice flakes. Very famous in the western part of India. This is a perfect breakfast menu/ snack for any time. Satisfying and fulfilling recipe.
Taste:
This tastes sweet and sour. The crunchy bites of nuts and crispiness make this recipe outstanding. This is mild spicy.
Since I personally eat less spicy I prefer mild spicy but you may choose to increase the number of chilies in this recipe or you may also add red chilies into it.
Texture:
Soft, Crispy and crunchy.
Ingredients used are :
- One medium-sized potato cut into small pieces
- A large onion chopped
- String beans one and a half cup cut into small pieces
- Bell pepper ( any color ) 1 cup
- Ginger paste 2 tbs
- Garlic paste 2 tbs
- Peanuts 1/2cup
- Raisins 1/4 cup
- Mustard seeds 1 tbs
- Curry leaves 10
- Coriander leaves as per choice or around 1/4 cup
- Garam masala 2 tbsp
- Coriander powder 1 tbsp
- Cumin powder 1 tbs
- Mango/ Amchur powder 1 tbs
- Salt 1 tbs or as per taste
- 4 tbs of oil
Note: For this recipe, I am using dagdhi poha which I found in the market. I choose this because of the texture. It is thick. So even after washing it, it becomes soft but stays dry enough even after cooking.
Pre-preparations:
- Wash dagdi poha nicely into running water by putting them into a strainer. Use hands to wash them nicely and keep it aside for later use. Also, allow it to drain all the water through the drainer. After 10 to 15 minutes it becomes soft to touch.
- Cut and chop all the washed veggies before you start to prepare this.
How to prepare:
Firstly follow the following steps:
- Take a thick bottomed pan and heat it.
- Into the pan add 4 tbs of regular oil and heat.
- After that add 1 tbsp of mustard seeds and let it splutter.
- Add Chopped onions and stir fry till it turns slightly brown in color.
- Then add 1/2 cup of peanuts and keep stirring until it turns slightly brown and looks cooked.
Secondly, once the above preparation looks cooked, add the following:
- 2 green chilies chopped
- Ginger 2 tbs and 2 tbs of garlic paste and stir till it looks little fried and the raw smell of garlic disappears.
- Next, add potatoes and stir for a few minutes.
- Then, add beans and stir for a minute or so.
- After that add bell peppers and stir fry for a minute
Finally, once the above steps are complete, add the following:
- Once fried add salt 2 tbs or as per taste
- Turmeric powder 1 tbs
- Cumin powder one tbs
- Coriander powder 1 tbs
- Garam Masala powder 1 tbs
- Mango powder one tbs
- Sugar 2 tbsp
- 3 to 5 tbs of lemon juice/squeeze one large lemon.
Mix and combine all together nicely. Sprinkle 1/4 cup of water and stir. Let it cook by covering with the lid. Keep the flame low. Allow it to cook for at least 5 minutes or so. Check-in between by opening the lid and stir.
Note: At this point in cooking if you see the texture of your poha is still hard to touch sprinkle a little more water and stir. Cover and cook until the texture is soft enough to touch.
Serve:
Serve this hot sizzling poha with some chopped onions on top. Also, make sure you garnish it with this spicy Indian Namkeen as shown in the picture below. This will definitely increase the crispy and crunchiness of the poha . You may choose any other namkeen on top as per your choice.
Enjoy this meal like breakfast or this is good enough to fulfill any time meal for a change.
Vegetable Poha served hot.

This sounds like a great recipe that has a little bit of everything in it. I wouldn’t have it for breakfast, as I am used to lighter dishes for the start of the day, but I would definitely eat it for lunch.
