Stir-fry Noodles with eggs and cabbage. Simple and easy to make with few ingredients. Indo Chinese style. Noodle stir-fries are one of my favorite weekend comfort foods. Whether made with lo mein noodles or rice noodles, these stir-fries are quick to prepare and serve as the perfect backdrop for everything from sliced chicken breast to tender bok choy. During this pandemic quarantine moment when nothing much is available into the stores and limited groceries available, especially fresh produces. I found this recipe with very few ingredients, quick and tasty. The noodles are boiled and stirred along with some spices and eggs and shredded cabbage. On top of it, we just need to saute with some soy sauce and green stir-fry chili sauce. Mix all these together and serve hot.

I love to pamper myself by serving these simple and quick stir-fry noodles with eggs and cabbage often, Lol and especially during these quarantine days where I don need many ingredients to make it extra special, this makes me so happy. This simply tastes awesome.

Giving all the measurements in cups for easy and better understanding. As far as I understand proportions are easy to measure, for those who don’t have measuring cups/ utensils at home.

Ingredients needed to make Stir-fry noodles with eggs and cabbage:

Boiled noodles 1 cup

Shredded cabbage 1 cup

Eggs 2 whole ( medium )

Oil:

Vegetable oil, butter or chili oil : 3 tablespoon

Spices:

Salt: 1 teaspoon or as per taste

Pepper: 1 tablespoon

Garlic 2 tablespoon grated or chopped or garlic powder

Sauces:

Green chili sauce 1 tablespoon

Tomato ketchup 1 tablespoon

Sugar- a pinch or 1/4 teaspoon (optional)

Steps to follow for preparing Stir-fry Noodles with eggs and cabbage:

Boil water in a sauce pan. Once the water comes to boil, add some salt and a some oil and put the raw noodles inn. Let the noodles cook in low to medium flame for some time by frequent stirring with a spatula.

To check if the noodles are cooked or not, break a string by using hands. Note: The noodles should not be overcooked. In other words, it should not be too soft to break because we need to further cook these while we stir-fry, so just make sure to cook these 90 percent.

Once done immediately strain, preferably use a big large strainer to avoid sticking. keep it aside and let these get completely cold.

Stir- fry the noodles:

Once done with cooling lets get ready to stir-fry these.

Into a thick bottomed pan pour 3 tablespoons of oil or butter or chili oil. Once the oil is heated add chopped or shredded garlic 2 tablespoons and stir-fry for a few seconds. Break 2 whole eggs and drop in the oil and stir continuously until the eggs scramble up. Now on top of these scrambled eggs add washed and cleaned shredded cabbage and again stir-fry in medium to high flame. At this point, I love the aroma that comes out from this stir-fried eggs, cabbage and garlic.

Once these turn slightly golden in color and look fried, add the boiled noodles, lower the flame and continue frying all together for about a minute. Then add 1 and 1/2 teaspoon of salt, 1 tablespoon of pepper, and mix and stir-fry for another few minutes. Gradually you will come to see the noodles changes its texture and looks well cooked and slightly fried. Then finally by adding 1 tablespoon of soy sauce, 1 tablespoon of green chili sauce and tomato ketchup mix and cook by continuous stirring for about a minute. Finally, at the point, you will see the exotic stir-fried noodles are all done and look awesome. You may choose to adjust the amount of sauces and spices used according to your taste and flavor.

Serving tips:

Serve these noodles with hot tomato soup and chicken wings.

How to boil and strain the noodles perfectly?

I personally like to boil and cook these completely but avoid softening these too much. while I boil these, I put some salt and oil to avoid noodles to stick together and the salt soaks well into each strings bringing out even and salty flavor overall on the noodles.

Once done boiling, strain into a large strainer, and by shaking the strainer try to spread the noodles as much as possible. This would help the strings to separate from each other and brings out a better result while you stir-fry these you will see the difference.

What type of noodles we need to stir-fry?

Various noodles can be used for a stir fry. I like to use thicker, longer noodles. You can also use chow-mein noodles or even spaghetti.  You may also choose stir-fries shanghai egg noodles, or Japanese stir-fry noodles.

In this recipe, I have used thick noodles which turns out great. I stir-fried these for a couple of minutes and it tastes awesome.

Tips to get a Great Noodle Stir-Fry

A noodle stir-fry is a technique more than a recipe. In addition to the noodles, think about adding four to five cups of other stir-fry ingredients, like slices of chicken or beef, bell peppers, snow peas, bok choy, or napa cabbage. For adding harder vegetables, like broccoli or carrots, blanch or steam them before stir-frying to make them easier and quicker to stir-fry. There are different frying techniques as well.

Using a wok is a better idea to stir-fry the noodles.

After boiling these it’s better to strain them immediately into a large strainer for enough space and by shaking the drainer let them dry out completely for easy and better frying and also to avoid sticking.

While you stir-fry the noodles make sure to stir and toss continuously to avoid sticking and getting burnt. If you want you may also use a flexible metal spatula in one hand and bamboo chopsticks, on the other hand, to toss the noodles with the other ingredients, “like tossing a salad,” or you can use two spatulas for tossing nicely and comfortably.

Which Noodles are perfect to stir fry?

Any Noodle could be stir-fried easily once you know the right tips and tricks to make it perfect. For me, I often use regular Italian spaghetti noodles barilla, which turns out great as well. If this is your first noodle stir-fry, stick with standard lo-mein egg noodles. You may also try rice noodles, udon noodles. etc

Total preparing time:

Pre-preparations like cutting the veggies- 15 minutes

Boiling the noodles- 12 minutes, this also depends on the type of noodle being used.

Stir-frying- 20 minutes.

Total time: Around 47 minutes
