Spinach Loaf Cake. Soft and spongy recipe.
Spinach Loaf Cake is prepared using fresh spinach purée mixed with homemade buttermilk, eggs, black raisins, all-purpose flour, almond flakes, sugar, honey, baking powder, oil, a pinch of salt, lime, and some vanilla essence.
Taste and texture
The taste is lightly sweet, soft, and spongy. The texture is slightly different from other sponge cakes but it’s yummy I must say that. The raisins and the almond flakes add up to the texture and sweetness which I personally like. You may add any other dry nuts chopped as well.

- Preparing the buttermilk: 20 minutes approx
- Mixing the ingredients: 10 minutes
- Baking: 1 hour
- Total time consumed: 1 hour and 30 minutes approx.
Ingredients required to prepare this are
- Milk 1 cup
- Lime one small
- Spinach purée 1 cup
- Oil 1/4 cup
- Salt 1/4 teaspoon
- Eggs 2 large size
- Sugar 1/4 cup
- Honey 1/4 cup
- Baking powder 1 teaspoon
- Vanilla essence 1 teaspoon
- All-purpose flour 1 cup + 1/4 cup
- Black Raisins 1/4 cup
- Almond flakes 1/4 cup
- Some extra Almond flakes for covering the top
The importance of the ingredients used to prepare Spinach Loaf Cake is as follows
- Milk adds up taste and texture to the loaf cake
- Lemon creates an acidic reaction to curdle the milk which makes the loaf cake fluffy and soft.
- Eggs add up to the density and sponge texture to the loaf cake.
- Oil makes the cake soft and keeps it moist
- Spinach adds up nutrition (includes fiber)
- Dry nuts adds up taste, texture, and nutrition
- Sugar gives sweetness
- Honey adds up some flavor and natural sweetness to the cake.
- All-purpose flour adds up the texture
- Salt to balance the taste
Directions to prepare
Grab some fresh spinach and wash and clean them. Put them into a grinder Add 1/4 cup of oil and prepare a purée out of it. Measure 1 cup of puree and keep aside for later use.
Into a bowl pour 1 cup of milk and squeeze one lime juice into it. Stir and cover the mixture and leave it for 20 minutes aside. Uncover after 20 minutes, the mixture turns creamy and thick consistency as the milk curdles due to the acidic reaction with the milk.
Into the milk add 1/4 cup of honey, 1/4 cup of granulated sugar, 1 cup of spinach purée, 2 large eggs, baking powder 1 teaspoon, and salt 1/4 teaspoon and beat the mixture using a hand beater nicely for some time until everything combines well.
Into the mixture then add All-purpose flour 1 cup and 1/4 cup gradually and mix into the liquid mixture. Keep mixing until the mixture is smooth and easy flow consistency.
Add dry nuts like black raisins 1/4 cup and Almond flakes 1/4 cup and mix. You may use any other dry nuts of choice.
Lastly, add 1 teaspoon of vanilla essence and give it a quick mix.
Into a loaf pan place, a parchment paper and brush it up with some oil or butter. Then pour the loaf batter into it.
Cover the top with Almond Flakes.
Baking
Into a preheated oven at 350 degrees Fahrenheit bake it for 1 hour.
Insert a skewer or a toothpick inside. If it comes out clean then it’s baked completely inside. Stop baking further and allow it to cool sometime.
Once slightly cold it shrinks a little bit.
Take it out from the loaf pan and slice into pieces.
Garnishing
You may drizzle up some honey or sugar icing on top. For some extra decoration you may sprinkle some pomegranates. Looks gorgeous.

Lastly, add 1 teaspoon of vanilla essence and give it a quick mix.
Into a loaf pan place a parchment paper land brush it with some oil or butter. Then pour the loaf batter into it.
Cover the top with Almond flakes. You may use any other dry nuts of choice.
BAKE:
Preheat the Oven at 350 degrees Fare height and Bake for 1 hour or until you see the sides turns golden brown and large cracks apperas on the top
Baking Test:
Insert a toothpick/Skewer inside, if it comes out clean it is completely baked inside
The other sign that it has baked is that large cracks appear on the top and the sides become golden brown in color that’s the time when you know it is baked and it should be out from the oven.
Let it cool slightly then scrape from the sides and take it out from the loaf pan.
Slice them into pieces once cold.
Drizzle up some honey and sugar icing to add some extra sweetness and to enjoy it moist.
Decorate with some fresh pomegranates on the top. Serve and enjoy.
