Pineapple and Sooji Halwa. Pineapples and semolina sweet or a dessert recipe are prepared using freshly chopped pineapples cooked in water and sugar mixture until soft. And then mixed with sautéed semolina along with some clarified butter. These turns very aromatic and taste delicious. Served and garnished with ground toasted pistachios and almonds. For Pineapple syrup:
- A big bowl of juicy pineapples finely chopped. or say 2 cups
- Sugar Littke less than a half of the bowl
- Water 2 bowls/cup
For Halwa mixing
- Semolina (Sooji) 1 cup
- Water 1 cup
- Ghee (clarified butter) 1/3 cup + 3 tablespoons
- Almond flour 1/2 cup
- Sugar 3 tablespoons or as required
- Cardamom powder 1/2 teaspoon
Directions to prepare Pineapple Sooji Halwa sweet
Finely chop a juicy and fresh pineapple and cook these in water and sugar syrup until softened. Once done keep these aside. Into a hot saucepan add ghee I.e clarified butter and mix Sooji i.e semolina to it. Stir continuously and fry semolina I.e Sooji in at the lowest flame for about 3 to 4 minutes. You may notice a slight change in the texture of the Sooji appears and it turns aromatic within few minutes. Do not overcook semolina to avoid burning. Once these turns aromatic add the cooked pineapples along with the syrup and quickly mix. Very quickly the syrup gets soaked by the semolina. At this point immediately add water 1 cup to it and mix. Also, add some extra ghee and sugar as required, as per taste and mix. Cook for another 4 to 5 minutes and it’s done.
Immediately transfer into a large container to set. Use a spatula or a spoon to level these up and allow them to set. Sprinkle toasted ground pistachios and almonds (slightly salty) or any other dry nuts of choice. Preferably choose the toasted ones because these are slightly salty which adds up flavor to the sweets for sure:)
Total cook time
- Preparing the pineapples 40 minutes includes cutting and cooking
- Cooking the sweet 15 minutes
- Total time consumed 55 minutes

1 bowl of finely chopped juicy pineapples
Transfer into a container to cook. Add water 2 bowls into it.
Add little less than 1/2 a bowl of sugar
Stir to dissolve the sugar
Allow it to boil and cook the pineapples.
Preferably cook and boil in medium flame 🔥
It took me 35 minutes to get the pineapples soft and more sweet
In between make sure to stir and cook. If required you may add a little more water to soften the pineapples. once done turn off the flame and keep these aside for later use.
Heat up a sauce pan and add 1/3 cup of Ghee (clarified butter) into it
Immediately add semolina (sooji) and immediately stir to mix
Keeping the flame at lowest fry these for 3 to 4 minutes. These turns aromatic.
Immediately add the cooked pineapples along with the syrup into it and quickly mix.
Mix immediately
Within few seconds the syrup is soaked by the Sooji.
Immediately add 1 cup of water and mix
Add 3 tablespoons clarified butter (ghee) into it
Also add sugar 1/4 cup or as required into it and mix
Quickly stir and mix nicely. Keep the flame at lowest to avoid burning
Continuously stir and cook for 5 minutes
Thick consistency Sooji Halwa is ready
Transfer into a container
Spread nicely all over the container and allow to cool a little bit
Sprinkle some toasted ground pistachios and almonds all over it
Press lightly to stick these ground pistachios with the Sooji Halwa.
Cut into desired shape and pieces.
Decorate with some cooked or raw pineapple pieces along with some tutti-frutti on the top. Which obviously gives a tempting and gorgeous look to the Sooji Halwa sweets.
