Though mutton meat is easy to prepare but the most important thing is to cook this meat really well in order to get the best results. The taste and its flavor completely depend on how well it is being cooked. To start with the Mutton Curry πŸ› recipe I would like to detail the ingredients that are being used while I prepared the curry for the mutton meat or say goat meat. We need a combination of whole and ground spices which makes the dish very aromatic and delicious just like the restaurants. In fact better than the restaurants:)

The whole spices that are being used are oil, bay leaves, cloves, cardamoms greens, and the black big ones, mace (javitri), Powdered spices that are being used are ground nutmeg 🌰 (jaifal), cumin powder, coriander powder, turmeric powder, red chili 🌢 powder, salt, Garam masala powder. Other ingredients are ginger thinly sliced, garlic πŸ§„ minced, tomato πŸ… paste (canned), coriander leaves πŸƒ chopped, onions πŸ§… thinly sliced, clarified butter 🧈 , cashews, and of course the mutton and the water to cook πŸ™‚

Ingredients required to prepare Mutton Curry

To prepare the spice mixture for mutton curry we need

  • Oil 4 tablespoons
  • Whole spices are~
  • Bay leaves 4 small
  • Mace 1/4 teaspoon powder form or just add 2 small pieces
  • Green cardamoms 4 to 5
  • Black cardamoms 3
  • Cloves 3
  • Onions sliced πŸ§… 1/2 cup
  • Green chili 1 or as required
  • Cashews 10 to 15
  • Red chili powder 1 teaspoon
  • Nutmeg 🌰 1/4 teaspoon powder form
  • Garlic minced 2 tablespoons
  • Ginger thinly sliced 2 tablespoons

To prepare the Mutton we need

  • Mutton 1 kg ( cut into small pieces)
  • 3 large-sized onions πŸ§… (thinly sliced) 5 cups
  • 1 cup Tomato πŸ… paste (canned or fresh)
  • Salt 1 and 1/2 teaspoons or as per taste
  • Red chili powder 1 teaspoon
  • Turmeric powder
  • Cumin powder 1 teaspoon
  • Coriander powder 2 teaspoons
  • Garam masala powder 1 teaspoon
  • Water 3 to 4 cups or as required
  • Coriander leaves chopped 4 tablespoons
  • Clarified butter 2 tablespoons
  • Squeeze 1 small Lime juice

Short Summary To Prepare Mutton Curry πŸ›

First of all, we need to wash and clean the mutton pieces thoroughly under running water. Keep aside and let the extra water drain out. By that time we will prepare the spice paste for the curry which makes this curry recipe very special and yum! Heat some oil into a pressure cooker and add all the whole spices one by one into it and give these a quick sautΓ©. Immediately add some thinly sliced onions and stir fry few minutes. Let the onions and the spices get fried well. Make sure not to burn the spices. Take the spices out into a bowl and let these cool. Once the spices are cold enough to touch transfer them into a grinder jar 🏺 and prepare a paste out of it. Keep this paste aside and let’s prepare our mutton.

Into the same cooker add 1/4 cup of oil and heat. Add the rest of the sliced onions πŸ§… and stir-fry until turns golden brown in color. Add the mutton pieces and continue to stir and fry these together for 20 to 30 minutes. Continue to cook. In between frying add some salt and turmeric powder and give it a mix. Then add cumin powder, coriander powder, and Garam masala powder and continue cooking until the mutton starts to cook, oozes out water. Continue to cook further for some time then add the spice paste that we prepared and give it a nice mix. Add clarified butter and tomato πŸ… paste canned or fresh and continue to cook until the mixture starts to leave oil.

Now at this point add some water around 3 to 4 cups or as required and mix. Finally, add chopped coriander leaves and squeeze out 1 small lime juice into it. Sprinkle some salt as required. Once the mixture starts getting a boil cover with a lid and cook 3 to 4 whistles. Once done βœ”οΈ open the lid, give it a nice mix and transfer into a serving container. Serve and enjoy hot with rice 🍚 Naan πŸ«“ or anything that you prefer.

Points to remember:

  • Slice the onions thin and try to separate the strings as much as possible to fry them well. This results in a better flavor.
  • While preparing the spice paste try not to over fry the whole spices or burn them to restore the nice aromatic taste and flavor. Fry the onions with the whole spices until turn golden brown in color.
  • Preferably small chopped mutton pieces turn out good for this Mutton curry recipe as these could be fried well and easy to cook until soft.
  • You may also use fresh tomato puree for this recipe in place of canned one πŸ™‚

Washing and Cleaning the mutton meat πŸ–

Thoroughly wash and clean the mutton pieces under running water πŸ’¦ Leave these aside for some time to drain out any excess water πŸ’§

Preparing the spices for the Mutton Curry πŸ›

Heat 4 tablespoons of oil in a cooker. Add bay leaves πŸƒ, cardamoms green, cardamoms black, cloves and mace. Quickly stir and immediately add some thinly sliced onions πŸ§… into it. Mix and stir-fry these.

Thicnly sliced onions added 1/2 cup

Add 1 green chili, red chili powder, a pinch 🀏 of nutmeg powder, ginger thinly sliced, some garlic cloves minced, and few cashews in it.

Continue to stir and fry these until turn golden brown in color. The mixture looks oily and smells delicious πŸ˜‹. Take this mixture out into a bowl and allow it to cool. Then grind these to prepare a smooth paste and keep aside to later use in the recipe.

Preparing the Mutton for the Mutton Curry πŸ› recipe

Into the same cooker heat 1/4 cup of oil and add the rest of the sliced onions πŸ§… stir-fry the onions until turn slightly golden brown in color.

Next add the mutton pieces into it and mix.

Frequently stir and cook these for about 20 to 30 minutes.

In between add some salt, turmeric powder and mix.

Now add cumin powder, coriander powder, and some Garam masala powder into it and mix.

Continue cooking until the mutton starts to cook and oozes out water.

Continue to cook few more minutes then add the spice paste into it and mix nicely.

Then add tomato πŸ… paste and clarified butter 🧈 (Ghee) into it and continue to cook on slow flame sometime.

Slowly the mixture starts to leave oil.

At this point add water 3 to 4 cups or as required into it and mix.

Finally, add in some chopped coriander leaves and squeeze out one ☝️ lime juice. Give it a nice mix.

Once starts to boil put the lid on. Set up the whistle. Cook in low to medium flame until it whistles 3 to 4 times.

Allow it to cool until the lid opens by itself. Once done βœ”οΈ give it a nice mix and transfer into a serving bowl.

Enjoy this mutton curry with any type of rice 🍚 fried rice, plain rice, biryanis, Naan πŸ«“ , or anything that you want to try. It’s simply delicious.

  • 1/2 cup Onions thinly sliced
  • 1 or as required Green chili
  • 10-15 Cashews
  • 1 teaspoon Red chili powder
  • 1/4 teaspoon Nutmeg ground
  • 2 tablespoons Garlic minced
  • 2 tablespoons Ginger thinly sliced
