MALPUA. Shallow fried. Very Easy and tasty authentic sweet recipe which is being prepared by womens since ages. This sweet is extremely easy to prepare at home and tastes delicious 😋. Usually, these are being deep-fried but since I tried out the shallow frying method and it turned out well, so I thought to share.
Usually this sweet is prepared using only All-purpose flour, sugar, and fennel seeds as the main key ingredients but in this recipe, I have added semolina (sooji) and desiccated coconut 🥥 to prepare the pua i.e the sweet puree. Though there are many other ways as well 🙂

Ingredients required to prepare Malpua sweet, shallow fried and tasty.
To prepare the Pua or the sweet puree ~
- 1 cup All-purpose flour (maida)
- 1/2 cup semolina (sooji)
- 1/4 cup Desiccated coconut 🥥
- 1 teaspoon fennel seeds
- 1/4 cup powdered sugar
- 1/2 cup milk
- 2 tablespoons of finely chopped cashes
- 2 tablespoons of ghee (clarified butter) required to shallow fry these.
To prepare the Sugar syrup for the Malpua we need ~
- 1 cup water
- 1/2 cup sugar
- Mix and Bring both to a boil just for 2 minutes and pour over the Malpua
For Garnishing ~
- Ground pistachios
- Cashes
- Raisins
Total Cook 👩🍳 Time ~
- Preparing the batter for Malpua and frying these ~ 35 to 40 minutes approximately
- Batter Rest time 30 minutes
- To prepare sugar syrup 2 to 3 minutes
- Soaking Malpua in sugar syrup will take 1 hour or above
- Total time consumed to get these on the plate ~ 2 hours approximately
Short Summary for preparing Malpua, shallow fried ~
Mix 1 cup All-purpose flour, 1/2 cup of Semolina, 1/4 cup Desiccated coconut, 1/4 cup powdered sugar, 2 tablespoons of finely chopped cashews, and 1 teaspoon of fennel seeds together into a bowl. Now add 1/2 a cup of milk gradually into it and mix. Milk should be at room temperature. Also, add water 1 and 1/4 cup into it and mix to prepare a batter, Beat the mixture using a hand beater for 5 minutes for making it light and fluffy. Cover and keep the mixture aside for 30 minutes. Uncover and give it a nice mix. The thick and easy pouring consistency mixture is ready to be fried.
Heat 2 tablespoons of ghee into a frying pan. Gently pour the batter using a spatula. Do not press or spread the batter. Just pour a small amount like you do when preparing the pancakes. Small to medium-sized pua or puree should be great. Open cook few minutes, flip and turn to the other side. Cover and cook both sides until slightly golden brown in color and gets slightly puffy. Cooked well inside. Cooking a little longer also gives crisp corners to the pua/poori and tastes delicious. Shallow frying both sides might take a little while but it could be fried well in very little oil or ghee instead of deep-frying these.
Preparing the sugar syrup ~
To prepare the sugar syrup for the Malpua, simply take 1 cup of water and 1/2 a cup of sugar and mix. Bring the mixture to a boil. Once starts to boil, just continue boiling for 2 minutes and turn off the flame. Thin sugar syrup works great as it soaks a little better into the malpua 🙂
Note” Add hot or warm Malpua into a hot or warm sugar syrup as this helps in better soaking into the sweets.

Tips and Tricks to prepare Malpua at Home ~
- Tips for better results to prepare shallow fried Malpua –
- Beat the batter 5 to 7 minutes nicely and let it rest 30 to 40 minutes before shallow frying these.
- Pour the sugar syrup on top of hot or warm Malpua to help soak the syrup nicely and quickly
- Let these Malpua soak in syrup minimum 1 hour or more for best results.
