I have tried many other recipes using lemons but this recipe that I came up with is so yummy and different. I guess I don’t mind adding more lemon flavor into it whether, in the form of pulp, juice, maybe more of the lemon skins softened form! yum !!🤤 If you are a lemon lover then you will like this idea for sure 🙂

Ingredients required to prepare Lemon Loaf Cake are:

  • 2 cups all-purpose flour 284 grams
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons of lemon zest (Lemon and lime zest) mixed
  • 1/4 cup oil
  • 1 cup granulated sugar
  • 2 large size eggs room temperature
  • 4 teaspoons of lemon juice
  • 1/2 cup milk room temperature

Lemon Glaze (optional)

  • 3 teaspoons of sugar
  • 4 teaspoons of lemon juice

Importance of the Lemon Loaf Ingredients:

  • Dry Ingredients. This consists of All-purpose flour, baking powder, and salt.
  • Lemon zest. A necessary ingredient when making lemon bread.
  • Oil. This is important to make the loaf cake soft and moist.
  • Sugar. Surely for the sweetness
  • Eggs. For the texture and to add some protein
  • Lemon Juice. The perfect amount to contribute to a tangy loaf.
  • Milk. Another essential ingredient to make a loaf with the perfect crumb.

Optional ingredients includes some extra sugar and lemon juice for the glaze.

As far as accessories are concerned, you need a manual hand beater or an electric hand beater for better results.

You will also need a loaf or a bread pan, I guess any size that can contain the mixture leaving some space on top would work.

Directions to prepare a Lemon Loaf Cake.

It is important to get your pan ready before you begin so either grease and flour or spray non-stick spray.

Next, let’s combine the dry ingredients together. In a large bowl sift or whisk together the flour, baking powder, and salt. Set it aside and let’s prepare our wet ingredients.

Into the bowl break two large-sized eggs and beat with the hand electric beater or by using a manual hand beater until the eggs smoothen.

Now add the lemon and lime (mixed) zest 2 teaspoons. Or you may just use any lemon or lime zest particularly and give it a mix.

Add oil 1/4 cup, milk 1/2 cup and lemon juice 4 teaspoons into it and mix.

Into the wet ingredients now add the dry ingredients gradually and mix until forms a smooth and thick consistency batter.

Into the smooth loaf cake batter now finally add a few drops of orange or a yellow food color to enhance the visual beauty of this soft lemon loaf cake.

Once done ✅ grease a loaf or a bread baking pan with oil or butter and place a parchment paper so that it sticks to the pan and doesn’t move from its place while you pour the batter in. Also, apply some oil or butter on top of the parchment paper and to the sides of the pan.

Finally, pour the batter. Tap to release any air bubbles and bake.

Baking:

Bake in a preheated oven at 350 degrees Fahrenheit for about 55 to 60 minutes.

Once done ✔️ baking, there appear some cracks. That’s the time you may need to check by inserting a toothpick inside whether it’s baked completely or not. If the stick comes out clean this means it’s done and baked well inside.

Total Cook Time:

1 Hour and 15 minutes approx.

Directions to prepare the Lemon Glaze

Warm up the pan and add 4 tablespoons of Lemon juice and 3 tablespoons of sugar. By Stirring and Cooking continuously on a low flame the mixture thickens. Cool the mixture and then brush up the Lemon loaf Cake with this Glaze.

This adds up a glaze on top of the Lemon Loaf cake and gives it a strong lemony taste on the outer ring when sliced once baked. This step is optional though. It would taste perfectly fine without using the glaze as well 🙂 Hope this would help!

Tips, Tricks and Recipe Notes:

Which oil you can use? You may use any regular vegetable oil or butter for this recipe. Eg Canola oil.

How can I get the most juice out of a lemon: In order to maximize the amount of juice we can get from one lemon, we need to break down the membranes located inside the lemon. Here’s how:

  • Start with room temperature lemons. In a pinch, you can always microwave a lemon for 30 seconds; allow to cool down and proceed;
  • place the lemon in a bowl of warm water;
  • vigorously roll the lemon on the countertop for a few seconds;
  • cutting the lemon lengthwise allows you to get a better grip and therefore more juice;
  • use a lemon reamer or other gadget to extract more juice.

Instructions

  • Preheat the oven to 350℉ (175°C).
  • Grease the Loaf baking pan with oil or butter and preferably use parchment paper to bake this.
  • Mix the dry ingredients together in a bowl-like All-purpose flour, baking powder, and salt.
  • Break two large size eggs and beat until smoothens. Then into it add milk, Lemon zest, oil, lemon juice, and food color and mix.
  • In a large mixing bowl mix all the ingredients (The dry and the wet ingredients) together using an electric beater or a manual hand beater at a medium speed.
  • Bake in a preheated oven for 55 to 60 minutes or until golden brown in color and some crack appears on the top of it. Also, a cake tester comes out clean.
  • Once baked. Take it out from the oven and allow to cool. Apply some Lemon glaze which is optional on top of the Lemon loaf cake.

Step by Step directions to prepare Lemon Loaf Cake along with images below.

Into a bowl take 2 cups of All-purpose flour

1 teaspoon of baking powder,

1/4 teaspoon of salt

Mix all the dry ingredients

Add 2 large size eggs room temperature

Beat with an electric beater or by using a manual hand beater until smoothens.

Add milk 1/2 cup room temperature

Add sugar 1 cup

Mix and beat the mixture. Do not overbeat.

Add oil 1/4 cup (Any vegetable or refined oil)

Add orange or yellow food color 4 to 5 drops.

Add the dry ingredients gradually and mix

Mix…

Mix until makes a smooth lump-free batter

The texture is thick

Watch the texture closely.

Brush the loaf or a bread pan with some oil or butter

Place a parchment paper and stick it to the bottom of the pan.

Brush the top and the sides of the loaf/bread pan with some oil or butter and then pour the batter.

Pour the Lemon loaf batter into the baking pan

Tap to release any air bubbles. Preheat the Oven before you bake this…

Bake: Bake at 350 degrees fare height for about 55 to 60 minutes.

Once done baking you will see some cracks appear on the top of the Loaf cake.

Insert a toothpick. If it comes out clear then the Loaf cake is completely baked inside.

Allow it to cool sometime then cut into slices and enjoy.

These are soft and delicious.

Sneeze out 4 Tablespoons of Lemon juice.

Add 3 tablespoons of sugar

Stir and cook in low to medium fame until the mixture thickens

Let the mixture cool sometime then brush on top the Lemon loaf cake.

This adds up Extra Lemony flavor to the outer rings of the loaf cake and makes it Glossy which looks Gorgeous.

Tips

  • Ensure the oven is preheated to the right temperature.
  • Take out the milk, and eggs a few minutes before starting.
  • Beat the eggs until smooth before adding the dry ingredients into it. 
  • Reduce the speed to low when adding the flour and milk. DO NOT OVERMIX.
  • Lemon zest is an important ingredient in this recipe. This is the bright yellow outer layer of the lemon peel. Use a micro-plane or a box grater for grating. Make sure you only grate the yellow part as the white pith is extremely bitter.
  • Make sure to add the dry ingredients into the wet ingredients gradually to avoid any lumps which might happen to form.
