About: This is a very easy bake recipe. Very few ingredients needed. I have used Pillsbury white flour cake mixture to make this amazing mini-sized cupcakes and bread pan shaped big size cake and it turned out so nice and fluffy. Smells so good aha😋. Well, I am putting up exactly one cup measurement for this recipe so make sure you double the number of ingredients if you are using the whole pack of the flour.

But even if you are the first time to taste this then I must say this is a spongy and a mild sweet in taste. The fruit mixture makes it more delicious. A must-try the recipe. Ingredients used:
- 1 cup of the white flour mixture
- 2 whole eggs must be at room temperature
- 1/4 tsp of vanilla essence
- 1/4 tsp of salt
- 6 tbsp of melted butter must be at room temperature
- 1/4 cup lukewarm water
- 2 big spoon full of holiday fruit mix and some for garnishing on top of the cupcakes.
Note: You need mini baking cups to make these cupcakes. I have used mini cups and they puffed up a really good size.
Directions to prepare
- Into a bowl add 2 whole eggs and beat them with a hand beater or electronic beater really nice.
- Then add 1/4 tsp of vanilla essence, 1/4 tsp of salt, and 8 tbsp of melted butter ( must be at room temperature ) into it and keep on beating and mixing for few minutes.
- Gradually add one cup of flour and keep mixing until smooth. Since I have used a white ready-made cake mixture there is no need to add extra sugar as it is already sweet. But if you want you may add a little icing sugar into it as per your taste. For me, it is the perfectly right amount of sweet and along with the added fruit mixture it becomes perfectly fine.
- Into it add 2 big scoop of fruit mixture and combine well. Then pour the batter into the baking cups. Don’t overfill it because they will puff up once baked. Sprinkle some fruit mixture on top. Tap them a little with the help of your fingertips or spoon. Now, this is all set to go into the oven.
- Place them inside the preheated oven at 350 F for 12 to 14 minutes and bake them. Once you see they puffed Up and slightly changed in color get them out of the oven. Below is the picture showed how it will look when fresh out of the oven.
These cupcakes are now ready to serve. Let it cool and enjoy it on any occasion.
Baking in a bread pan/loaf pan:
Now the next way of making the cake with the same batter with the same measurements is that you just need to simply pour the cake mixture into the bread pan instead of baking cups. All you need to do is spray or apply some oil or butter into the bread pan and place one baking sheet on it so that it sticks to the bottom of the pan. Spray or apply butter or oil on top of the sheet as well and simply pour the batter. Tap the pan 2 to 3 times to avoid any air bubbles.
Put it into the preheated oven at 370 F for 30 minutes or so. Check-in between and after 27 to 30 minutes to see if the bread is baked nicely or not. When the cake turns golden brown on top it is ready to come out of the oven. Also, you may put a knife inside and see if it is baked nice inside or not. If the knife comes out clean it means it is nicely cooked.
Well take it out of the oven and let it cool. Cut into pieces and serve.
