Eggs and chicken tacos with homemade salsa seasoned with Mexican herbs with chunky guacamole and fresh mozzarella simply taste delicious. Easy to make and healthy meals for kids and adults.
Taste and texture :
Eggs and chicken tacos feel sweet and sour and slightly cheesy in taste. The crunchy bites of the veggie mixture along with eggs and chicken goes really great together. Also, the smell of the herbs makes this so special. This tastes awesome.
Step 1:
Ingredients used to make scrambled eggs are as follows :
Into bowl crack eggs, add chopped onions, salt, hot paprika (Mexican) along with some Mexican herbs and beat them nice.
Eggs: 5
Salt: 1/4 tsp
Hot paprika ( Mexican ):1/4 tsp
Mixed Mexican herbs 🌿 1/4 tsp
Olive oil:2 tbsp
Directions to make :
Into a pan heat 2 tbsp of olive oil and add chopped onions and stir fry them. Then add crushed ginger and garlic and sauté for some time. Pour the beaten eggs into it and cook in low flame for few minutes by scraping them on sides and by continuous stirring keep frying to prepare the chunky scrambled eggs. Once done keep them aside.

Step 2 :
Ingredients used to make the homemade salsa :
Onions chopped white: 1 cup
Tomatoes chopped: 1/2 cup
Tomato sauce: 1 tbsp
Salt: 1/4 tsp
Mexican herbs: 1/ tsp
Hot paprika Mexican: 1/2 tsp (optional)
Mixed Mexican herbs: 1/2 tsp
Fresh cilantro leaves: 1/2 cup
Lemon juice: 1 tsp
Directions to make :
Into a bowl add small chopped onions preferably while onions. Add chopped tomatoes, drops of lemon juice, salt, a spoon of tomato sauce, mixed Italian herbs, hot paprika ( Mexican) and fresh cilantro. Mix all and keep aside for some time.

How to cook chicken sausage :
For this recipe, I’m using sweet apple organic chicken sausage because this really goes well with the other combinations that I have used. But you may also choose any other of your own choice. The idea is how to make easy and high protein pack meals quickly for your family in less time.
To prepare it quickly I just put these into the oven covered and cooked for about a minute and done. Cut into pieces and keep aside.
Choosing your tacos or tortillas:
For this recipe, I am simply choosing the plain flour tortillas which I personally like. You may also choose any other tacos or tortillas of your choice to try on this recipe.

Step 4 :
Cooking the tortillas or tacos:
Cooking many tacos together is tricky. Placing them in shape you can do something like I did if you don’t have a taco stand. I simply placed them on a cupcake baking tray facing the opposite side. Then line up your tacos and cook them into a preheated oven at 350 degrees Fahrenheit.
Once the oven is preheated it took me around 5 to 6 minutes to cook these. Or you may also cook these on flat pan/skillet or tawa in low flame. Place the tacos on top of a heated flat pan and by flipping them cook these nicely to both sides and use.

How to make Chunky guacamole?
For this recipe I have used the ready-made chunky and spicy guacamole but if you want you may also make this at home easily.
You can make this at home easily. Use fresh avocado 🥑 cut and scoop out the seed and use the soft portion of it. Add salt, some tiny chopped tomatoes ( soft ). Few drops of lemon juice, black pepper powder and smash mix with a spoon and make a chunky mixture.
Now again heading back to our tacos. Once the tacos are cooked and warm do the filling quickly and serve.
Step 6:
Filling :
Into each taco first put a layer of chunky guacamole than a layer of scrambled eggs and few slices of sweet apple chicken sausage in between and then a layer of salsa. Top it with some shredded fresh mozzarella and some extra hot sauce ( optional ) as per your choice. Finally, garnish them with some fresh cilantro and serve.

Serve these warm and put some extra hot sauce if you are cravings for more spicy 🌶 tacos. These could be a great meal for any age.
