Ingredients Required to Prepare the Christmas Sponge Cake:

  • Eggs 5 (medium to large eggs)
  • Sugar 2 cups or as required
  • Vanilla essence 3-4 teaspoon’s
  • Vinegar 5 teaspoons
  • Milk 2 cups
  • Maida (All Purpose Flour) 5 to 5-1/2 cups (Adjust the amount accordingly, but not too much or too less)
  • Baking soda 2 teaspoons
  • Tutti-fruity 4-5 teaspoons and some to sprinkle on the top

Step-by-step Method to Prepare Christmas Sponge Cake :

Into a large bowl, crack 5 eggs. Whisk a little bit, then add 2 cups of sugar and keep whisking, preferably using a hand mixer. When it starts to look like a smooth mixture, add 1 cup of oil and keep mixing. Gradually add around 2 cups of milk and keep mixing. Next, into it, add 1 teaspoon of baking soda and 5 to 6 teaspoons of distilled white vinegar. Mix everything well.

Next, gradually add around 5 to 5-1/2 cups of all-purpose flour (maida) into it and keep mixing. Slowly, the mixture turns thick like a batter. As soon as you see the mixture thick and a bit stretchy, it’s perfect to use. Next, add some tutti-fruity, about 4-5 teaspoons, and mix it into the cake mixture.

Next, immediately pour the batter into a greased baking bowl. Then sprinkle some tutti-fruity on top all around.

Bake at 350 degrees Fahrenheit for around 50 minutes or more until you see cracks on the top of the cake.

Insert a fork after 50 minutes to check if the cake is well cooked inside. If the fork comes out clean with no raw batter, then it’s all good. You may take it out of the oven and let it cool down.
