Chicken Meatballs Baked~ These are soft, cheesy, and delicious chicken meatballs that could be enjoyed by dipping in any of your favorite sauces or gravy. Serves great as spaghetti meatballs. Could be used as snacks or appetizers as well. In this recipe, I tried using fresh chicken breast meat chopped into smaller pieces. Texture-wise these meatballs are slightly spongy and juicier along with the perfect softness inside. Almond flour provides extra taste and flavor to the meatballs and spinach provides accurate softness and thus it feels great. Ingredients required to prepare Chicken Meatballs
- Chicken breasts 2 (serves 4, 112 g)
- Almond flour 3/4 cup
- All-purpose flour 2/3 cup + 1/4 cup
- Spinach chopped 2 cups
- Onion thinly sliced 1 small
- Salt as per taste
- Black pepper crushed 1/2 teaspoon
- Sprinkle some garlic powder
- Parley 2 tablespoons
- Oil or butter 2 tablespoons or as required

Washing Cleaning and Chopping the Chicken Meat Balls mixture
To start with the recipe we need the chicken chunks to be cleaned and washed and then chopped into smaller pieces. Since I have used whole organic chicken breasts in two pieces which serve 4, I have just chopped them into smaller chunks as possible instead of using the minced ones. Once these are chopped they are ready to be used and mixed with the other ingredients.
Preparing the chicken Meat Ball Mixture
Into these chopped chicken meat add Mozzarella cheese shredded 1 cup, Almond flour 3/4 cup, All-purpose flour 2/3 cup + 1/4 cup that I used in portions while mixing these up. Sprinkle some garlic powder, salt as per taste, black pepper crushed 1/2 teaspoon, and mix them up using a spoon or spatula, and then finally add chopped spinach around two cups. Mix all the ingredients nicely using your hands to prepare these chicken meatballs. The texture of the mixture is soft and easy to be scooped out.
Cooking the mixture in some oil
Well, now the next step is to slightly sauté the mixture into some oil. This is because this enhances the taste and flavor and is important to be mixed with some oil before baking these chicken meatballs. Heat 2 to 3 tablespoons of oil into a non-stick frying pan or wok and then fry one small thinly sliced onions 🧅 once the oil is heated.
When onions are slightly fried add the chicken mixture into it and cook 5 to 7 minutes on low flame by continuous stirring to avoid sticking. Let the mixture slightly cool down and prepare meatballs out of it. Use small portions to prepare and shape them as balls.
Baking:
Line up the Chicken balls on a baking tray on top of a baking sheet to avoid sticking. Then bake in a preheated oven at 350 degrees Fahrenheit for 25 to 30 minutes. The balls start to leave oil and turn slightly golden brown in color. Take them out and enjoy hot with any sauce or gravy.

Washing cleaning and Preparing the chicken with other ingredients
Wash and clean chicken breasts 2 which serves 4
Slice and then chop into smaller pieces
Once done with chopping transfer them into a large bowl
Transferred into a large mixing bowl
Wash clean and then chop some fresh spinach
Keep aside for later use
Preparing the Chicken Meat Ball Mixture
Add Mozzarella cheese shredded 1 cup
Almond flour 3/4 cup
All-purpose flour 1/3 cup + 1/4 cup
Sprinkle some garlic powder or you may use some minced garlic
Black pepper crushed 1/2 teaspoon
Parsley 2 tablespoons
Mix the ingredients
Add chopped spinach 2 cups
Mix using hands
Once the mixture combines well keep aside and leave the mixture for 10 minutes
Cooking the mixture in some oil
Heat 2 tablespoons of oil into a wok or a frying pan preferably a nonstick pan to avoid sticking.
Fry one small onion thinly sliced
Add the chicken mixture into the oil that we prepared
Cook the mixture for 5 to 7 minutes in low flame by continuous stirring
The mixture is sticky but it’s okay because this step really enhances the taste and flavor.
Shaping up the Chicken Meat Balls
Turn off the flame and scoop out a portion from the mixture while it is still warm enough.
Apply some water in between your palms and shape them as balls, if you feel the mixture is too hot to touch.
Lining up the Meat Balls on a baking tray
Once all the meat balls are ready line them up on to a baking tray by placing a parchment paper/ baking sheet
Baking
Put these into the oven which should be preheated at 350 degrees Fahrenheit
Bake these for 25 to 30 minutes or until slightly turns golden brown in color.
Take them out and enjoy with any sauce or gravy of choice.
