Cajun Spiced potatoes, extra spicy and crispy: Two ways to enjoy. Barbecue Nation Style: Cajun Spiced Potatoes is the recipe made by using potatoes coated with mixed Italian and fresh herbs and then fried. Crunchy from outside and inside soft. In this recipe I’m going to show you a little extra, by coating the potatoes with Cajun spice and then present them as a barbecue nation style, topping up with Cajun creamy sauce. You may like to enjoy both ways or the one you like. In this recipe, I have used baby potatoes. You may also try this with regular ones. Let’s quickly check the recipe.
Taste and texture:
Cajun-spiced potatoes feel soft from inside and lightly coated crunchy at the top. The creamy sauce mixed with herbs tastes and smells simply delicious.
Ingredients for Cajun spiced potato sauce are as follows:
- Boiled Baby potatoes ( skin on ): 19 in the count
- Mayonnaise 3/4 cup
- Chili flakes 1 teaspoon
- Herbs mixed 1/2 teaspoon
- Oregano 1/2 teaspoon (optional)
- Onion powder 1 teaspoon
- Garlic powder 3 tablespoons
- Salt 1/2 teaspoon
- Black pepper powder 1/2 teaspoon
- Paprika 1 teaspoon
- Milk a little less than 1/2 cup to adjust the consistency of the sauce. You may add a little less or more as per your choice.
Ingredients for spicy Cajun-coating are as follows:
- Cornstarch 4 tablespoons
- All-purpose flour 2 tablespoons
- Water 1/3 cup or as required
- A pinch of salt or 1/2 teaspoon
- Black pepper powder 1 teaspoon
- Chili flakes 1/2 teaspoon
- Paprika 1 teaspoon
- Garlic powder 1/2 teaspoon
- Onion Powder 1/2 teaspoon
- Some freshly chopped mint leaves
- Lemon juice 1 teaspoon
Directions to prepare the potatoes:
Clean and boil the baby potatoes until soft by keeping the skin on.
Once boiled drain out the water and it slightly cools down, easy to touch. Then press and flatten every single piece of potatoes by using hands as shown in the pictures below. While pressing and make sure they retain a shape.
Directions to prepare the coating for the potatoes are as follows:
Into a bowl take 4 tablespoons of cornstarch, 2 tablespoons of all-purpose flour, a pinch of salt, black pepper powder 1 teaspoon, mixed herbs 1/2 teaspoon, green chili flakes or red chili flakes 1/2 teaspoon, garlic powder 1/2 teaspoon, onion powder 1/2 teaspoon, paprika 1 teaspoon, Mix and gradually add 1/3 cup of water and make a batter. You may add a little more water to get a perfect consistency. Finally, add some chopped mint leaves and squeeze out about a 1 teaspoon of lemon juice and mix.
Frying the potatoes:
Heat a pan and add oil to shallow fry the potatoes. Dip every single potato separately into the sauce. Lightly coat the potatoes and shallow fry them until both sides are equally cooked and turn golden brown in color. Looks crispy and crunchy outside. Drain excess oil and take them out. Transfer them into a plate.
Directions to prepare the Cajun sauce for the potatoes:
Into a bowl take 3/4 cup of Mayonnaise. Into it add mixed herbs 1/2 teaspoon, oregano 1/2 teaspoon ( optional ), onion powder 1 teaspoon, paprika 1 teaspoon, black pepper powder 1/2 teaspoon, garlic powder 3 teaspoons, green chili flakes or red chili flakes 1 teaspoon, salt 1/2 teaspoon, Give it a mix then add milk to adjust the consistency of the sauce by adding little less than a 1/2 cup. The sauce should not be too thick or thin. It should be medium consistency. Mix it nice then add 1/2 teaspoon of tomato ketchup but this is optional and red chili powder 1/2 teaspoon. Mix and the Cajun sauce is ready.
Serving tips:
You may enjoy this by dipping Cajun-spiced fried potatoes into the Cajun sauce. Or you might want to serve and enjoy by topping the potatoes by pouring the sauce on top and garnishing with some raw onions and coriander leaves as Barbecue nation style Cajun potatoes extra spicy.
Cook time:
- Boiling the baby potatoes 20 minutes or so
- Coating and frying the potatoes 35 minutes
- Preparing the Cajun sauce 10 minutes
- Total time to prepare around 1 hour 5 minutes.
