Ingredients you need to prepare Bhindi Masala at home
- Bhindi (okra) 1.5 pounds roughly chopped
- Onion 🧅 1 large finely chopped
- Tomato 🍅 1 medium
- Oil (regular) 3 to 4 tablespoons
- Mustard oil 2 tablespoons
- Coriander leaves 🍃 2 tablespoons
- Green chili chopped 2
- Ginger and garlic paste 2 teaspoons
- Yogurt 3 to 4 tablespoons
Spices ~
- Shahi jeera 1 teaspoon
- Black cumin (jeera) 1/2 teaspoon
- Turmeric powder 1 teaspoon
- Red chili 🌶 powder 1 teaspoon
- Salt 1 and 1/2 teaspoon or as per taste
- Garam masala coarsely ground 2 teaspoons
- Dry roasted cumin seeds 1 teaspoon
- Mango powder 1 teaspoon
- Jaggery powder 1 teaspoon
- Green cardamom powder 1 teaspoon

25 to 30 minutes

Wash and clean Bhindi (okra) nicely under running water 💦 and then pat dry them using a kitchen towel or a cloth. Cut and chop them into medium pieces.
Into a karahi or wok heat regular oil mixed with some mustard oil. Once the oil is heated add shahi jeera ( cumin seeds ) mixed with some black cumin seeds and some chopped green chilies and let these splutter. Next, add finely chopped onions 🧅 and ginger garlic paste and sauté few minutes. Then add turmeric powder, green. cardamom powder, red chili 🌶 powder, and mix. Immediately add the okra into the spices and mix well. Add coarsely ground Garam masala powder, cardamom powder, hing ( Asaephedita), mango powder, dry roasted cumin seeds, and salt 🧂 and mix these well. Fry these few minutes in low to medium flame 🔥 until halfway cooked.
Then add roughly chopped 1 medium tomato 🍅 and mix. Whisk some yogurt and add 3 to 4 tablespoons of it and mix. Finally, add some jaggery or sugar for sweetness and some coriander leaves 🍃 and mix. Open cook sometime or until it looks 90 percent cooked. Then cover and cook 10 more minutes if required or until done keeping the flame at the lowest to avoid burning the okra.

Washing, Drying and Cutting of Bhindi/Okra ~
Wash and clean Bhindi (okra) nicely under running water 💦
Pat dry them using a kitchen towel or a cloth.
Remove the top heads of the Okra and chop them into small to medium pieces.
Collect them all into a bowl
Frying and Cooking of Bhindi/Okra with the spices ~
In the Karahi or wok add 3 to 4 tablespoons of regular oil mixed with 2 tablespoon of mustard oil
Once the oil is heated add shahi jeera ( cumin seeds ) mixed with some black cumin seeds and some chopped green chilies and let these splutter.
